Jeg begynner å innse at listen med oppskrifter på andebryst begynner å bli veldig lang, og noen begynner kanskje å bli lei av å lese om det. Men det er jo veldig godt, da. Dessuten nå har vi spist opp alle jeg kjøpte på Kastrup for et halvt år siden, så da kan vi kanskje roe litt ned på andebrystforbruket. Dessuten, for meg er det vintermat og slik solen skinner ute i dag, er det snart på tide å bytte til en mer vårlig meny. Men altså, i dag skulle det være andebryst.

For en god stund siden kjøpte jeg en interessant bok på amazon.com. Den heter The Flavor Bible og en rett og slett en opplisting av hvilke ingredienser og smakskombinasjoner som passer sammen. Her kan man altså gå inn og finne forslag til nye kombinasjoner som man selv kanskje ikke ville ha tenkt på. Så når jeg har lyst på noe nytt og ikke vet riktig hva, pleier jeg å bla litt i denne boken. Det var tilfellet denne lørdagen også. Andebrystet lå ferdig tint på kjøkkenbenken, men hva slags følge skulle det få? Noe fruktig som appelsin eller plommer, eller noe syrlig som balsamico og løk eller noe bittert som endiver? Jeg hadde lyst på noe nytt og grep til The Flavor Bible og resultatet ble en rødvin, solbærsaus og ingefær sammen med selleripure.

Ingredienser

  • 1 stort andebryst
  • salt og pepper
  • 2 sjalottløk
  • 5 cm ingefær, revet fint
  • 4 dl rødvin
  • 4 ss solbærsaft
  • 2 ts hvitvinseddik
  • --
  • 1/2 sellerirot
  • 3 persillerøtter
  • 2 mandelpoteter
  • 2 ss creme fraiche
  • 2 ss smør
  • 1 dl melk
  • 1/2 ts salt
  • 1 ss hvitvin

Fremgangsmåte

  • Sørg for at andebrystet er helt tint dersom det har vært frossent.
  • Skjær ruter i fettet og gni inn rikelig med salt og pepper på begge sider av andebrystet.
  • Legg andebrystet med fettsiden ned i en varm stekepanne. Du trenger ikke fett i pannen for andebrystet avgir masse fett selv.
  • Stek det på fettsiden til fettlokket er sprøtt og gyllent. Snu og stek til kjøttet har en kjernetemperatur på 58 grader.
  • Ta det av varmen og la det hvile i ca. 10 minutter før det skjæres opp i skiver.
  • Mens kjøttet steker lages sausen og selleripureen.
  • Skrell selleriroten og del den i mindre biter. Gjør det samme med persillerøttene og mandelpotetene.
  • Kok opp litt vann og ha i selleri og persillerot. Vent 10 minutter med å ha i mandelpotetene. Kok til alt er mørt og mos så grovt eller fint ut liker. Rør inn creme fraiche og smør og tilsett melk til pureen får en passelig konsistens. Smak til med salt og evt. 1 ts hvitvin dersom du ønsker.
  • Lag sausen ved å grovhakke sjalottløken og blank den raskt i litt olje. Tilsett ingefæren og rødvinen samen med et par kvister timian og la det koke inn til det halve. Sil sausen og tilsett solbærsaften og juster søtheten med hvitvinseddik. Helt til slutt tilsett litt andefett.
