And og appelsin er en god og velprøvd kombinasjon, med den klassiske and a l’orange som det ypperste eksemplet. Men for de som ikke orker å gi seg i kast med en hel and, eller er mange nok til å spise den opp, er andebryst med appelsinsaus et godt og særdeles velsmakende alternativ.

Andebryst er ingen hverdagsmat med en kilopris på omkring 400 kroner, men i andre land er det litt mer overkommelige priser. Så siste jeg var i København, stilte jeg med en liten frysebag på Kastrup på veien hjem. Den ble fylt med andebryst til under halve hjemmeprisen. Så nå ligger det flere deilige andebryst i fryseren og kan tas opp når vi får lyst på denne delikatessen. Og det gjør vi jo, for dette er en av favorittkoseråvarene våre.

Igjen har jeg forsøkt meg på langtidssteking, og som de andre gangene ble resultatet meget vellykket. Jeg bruner imidlertid andebrystet i pannen først og bruker andefettet til å steke potetene i etterpå. Det gir skikkelig gode poteter også.

Ingredienser

  • 1 andebryst
  • salt og pepper
  • --
  • saften fra 2 appelsiner
  • 50 gr. smør
  • (1/2 chili)
  • --
  • 4 poteter
  • salt og pepper

  • 1 pk aspargesbønner

Fremgangsmåte

  • Begynn med å rute fettlaget på andebrystet og krydre det godt med salt og pepper.
  • Stek andebrystet med fettsiden ned til det har fått fin farge og blitt sprøtt.
  • Snu og stek det på andre siden også et par minutter.
  • Ta vare på andefettet.
  • Flytt andebrystet over i et ildfast fat og sett inn steketermometer. Sett ovnen på 80 grader og stek andebrystet til det får en kjernetemperatur på mellom 57 og 62 grader avhengig av hvor rosa du ønsker det.
  • Press saften av to appelsiner og kok inn til det halve.
  • Dersom du ønsker en litt sterk saus kan du ha en halv chili i og la den koke med. Sett til siden, resten gjøres rett før servering.
  • Skjær potetene i terninger og stek dem i andefettet til de er gyldne utenpå og møre inni.
  • Når andebrystene er ferdig tas de ut og legges til hviling 5-10 minutter.
  • Kok aspargesbønnene.
  • Gjør sausen ferdig. Ta evt. ut chilien og varm den innkokte appelsinjuicen og pisk inn kaldt smør. Sausen er nå klar til servering.

Anrett på tallerkener og server.

Hei. Takk for ei fin oppskrift. Kjernetemeraturen er 56 grader, så det er ikke lenge til middag. Takk for enkel og grei oppskrift.

Cecilie. bytt en appelsin med sitron. gjerne med litt maizenna også. Det er ikke klassisk appelsinsaus, men da blir det enda bedre ?
