Her har jeg laget en deilig vintersalat med kål som har alt man kan ønske seg av en salat på denne tiden av året.  Jeg har brukt to typer kål – rødkål og grønnkål. De gir selvsagt farge til salaten, men også struktur, tyggemotstand og karakter. Så har jeg tilsatt stangselleri og ristede frø som gir sprøhet og krønsj og tilslutt appelsin som bidrar med både sødme og syre. En frisk dressing runder det hele av. Oj, glemte jeg å si at den smaker kjempegodt? Vel det gjør den, og nå er det i hvert fall sagt.

Denne salaten passer godt mange ting. Vi spiste den sammen med en helstekt kylling, og det var en flott kombinasjon. Men jeg er sikker på at den passer godt til både kjøtt og fisk også. Og så vil den passe ypperlig på et koldtbord nå i julen sammen med all julematen. Min vintersalat med kål vil rett og slett være et friskt tilskudd til alt kjøttet vi spiser i julen.

Ingredienser

  • 200 gr grønnkål
  • 200 gr rødkål
  • 3 stilker stangselleri
  • 2 appelsiner
  • 2 ss solsikkefrø
  • 2 ss gresskarfrø
  • 1+1 ts olivenolje
  • --
  • 3 ss appelsinjuice
  • 1 ss sherryeddik
  • 2 ss olivenolje
  • 1 ts dijonsennep
  • salt og pepper

Fremgangsmåte

  • Riv grønnkålen i mindre biter.
  • Ha de i en bolle og tilsett 1 ts olivenolje. Kna/gni/massér kålen sammen med oljen til kålen blir myk og skifter farge fra støvgrønn til knallgrønn.
  • Finsnitt rødkålen og skjær stangsellerien i tynne skiver.
  • Varm 1 ts olje i en liten stekepanne og rist frøene til de begynner å skift farge og poppe.
  • Fileter appelsinene, del hver filet i 2-3 deler og sett til side. Klem appelsinjuicen ut av det som er igjen når filetene er skåret ut og ta vare på juicen.
  • Rør appelsinjuice, sherryeddik og sennep sammen i en liten skål. Tilsett olivenoljen og pisk godt. Smak til med salt og pepper og juster evt. dressingen med mer syre eller olje alt etter hva du liker.
  • Bland dressingen inn i salaten, men hold appelsinbitene og frøene igjen til rett før servering.

Tips

I stedet for frø, går det fint an å bruke nøtter. Både valnøtter og hasselnøtter ville passe fint her.
