DESEMBER – Dette er kanskje den måneden der krydderbruken er størst. Vi spiser småkaker som smaker deilig av anis, eller kanel. Lussekattene må selvsagt ha safran, eller i hvert fall gurkemeie for å få den fine gulfargen. Vi putter nellik i appelsiner til pynt. Lager gløgg med en blanding av nellik, kanel, kardemomme og ingefær. Og nettopp ingefæren dukker opp så mange steder i desember. Ingefær har en krydret, varm og nokså intens smak og den fås fersk, tørket, syltet og kandisert og den brukes både i søtmat og saltmat. Det er for eksempel vanskellig å tenke seg asiatisk mat uten ingefær. Den brukes like gjerne i en wok som i søtt bakverk. Her har jeg samlet mine 5 beste oppskrifter med ingefær som passer godt i julen.

Kandisert ingefær er kanskje ikke det typiske julegodteriet, men hjemme hos oss hører det med. Dette godteriet har en litt heftig, intens krydret smak. Vi spiser det som det er, eller bruker det i bakst og godteri.

Jeg har bakt disse kjeksene til jul, men de passer i grunnen godt hele året. De har en god krydret smak av ingefær og pepper.

Lammerull

Denne rullen minner meg om min mormor. Hun lagde ofte denne, og jeg elsket den. Å komme hjem til besteforeldrene mine og få brød med rull på var toppen av lykke. Oppskriften hennes har jeg ikke, men denne ligner ganske mye (såvidt jeg husker).

Gløgg

Ingen jul uten gløgg, og ingen gjøgg uten ingefær. Ingefæren gir en krydret, varm smak til gløggen. Hver jul koker jeg opp en stor porsjon gløggessens som jeg kan blande med rødvin, eller solbærsaft alt etter som hvem jeg skal servere gløggen til.

Medisterkaker

Visste du at ingefær er helt essensielt i medisterkaker? Det og allehånde er det som gir dem den gode smaken. Medisterkakene serverer jeg sammen med ribba på julaften, men de er også gode utover i julen på brødskiva.

Fun fact

I folkemedisin har ingefær blitt brukt mot kvalme i lange tider. Det er selvsagt forsket på dette, og forskningn er ikke helt krystallklar. Men sliter du med svangerskapskvalme, bilsyke eller fyllesyke kan det trolig ikke skade å prøve.

Ingefær, gurkemeie, galangal og kardemomme (!) hører til den samme plantefamilien.
