Ingefær er et av de krydderne som absolutt hører julen til. Den er selvsagt i pepperkaker og gløgg, men også i medisterkaker og lammerull. Men denne roten kan også bli deilig godteri på egen hånd – med en god dose sukker da. Kandisert ingefær er små ingefærdisker som smaker herlig krydret og søtt på en gang. De er også utmerket å bruke i forskjellig slags bakst, nøtteblandinger eller annet godteri.

Kandisert ingefær er lett å lage. Den største jobben er faktisk å skrelle ingefæren synes jeg. Oppskriften nedenfor er ganske stor, og dermed er det mye som skal skjæres opp også, men med en mandolin går det som en lek. Har du ikke en mandolin kan det være et veldig godt hjelpemiddel å skaffe seg. Jeg bruker i hvert fall min mye.

Ingredienser

  • 500 gr fersk ingefær
  • vann
  • 2,5 dl sukker + 1 dl

Fremgangsmåte

  • Skrell ingefæren og skjær den i tynne skiver (2-3 mm), bruk gjerne mandolin om du har.
  • Legg ingefæren i en gryte og fyll på kaldt vann til det dekker.
  • Kok ingefæren i 35 minutter.
  • Hold av 0,5 dl av kokevannet og hell av resten.
  • Ha ingefæren, kokevannet og sukkeret (2,5 dl) tilbake i gryta og kok opp under kraftig varme.
  • Sett temperaturen ned til middels og kok til alt vannet er fordampet. Rør hele tiden.
  • Hell ingefæren ut på et bakepapir og la det kjøle seg ned.
  • Hell sukkeret i en bolle og ha oppi ingefæren. Bland godt til all ingefæren er dekket med sukker. Gjør gjerne dette i flere omganger. Tilsett mer sukker om nødvendig
  • Legg ingefæren over på en rist og la den tørke noen timer.
  • Oppbevar i en lufttett beholder.

Hei! Dette med mengde vann til ingefæren…:
Mener du at ingefæren skal tilbake i gryta med 0,5 dl vann og 2,5 dl sukker, og at resten av kokevannet skal fjernes?
Eller mener du motsatt,- at 0,5 dl vann skal fjernes, og ingefæren skal oppi resten av kokevannet pluss sukkeret?

Hei, det høres kanskje lite ut, men ingefæren skal tilbake i gryta med bare 0,5 dl av kokevannet og 2,5 dl sukker.
