Medisterkaker er skikkelig sesongmat. Faktisk så mye at det nesten ikke er mulig å få tak i medisterdeig og -farse på andre tider av året enn rett før jul. Og kanskje er det like greit siden medisterfarse inneholder mer enn 20% fett. Men den høye fettprosenten gjør jo at kakene blir veldig saftige og gode på smak. Og selv om dette ikke er hverdagsmat, er det jo greit å spise det av og til. For mange er dette en selvfølgelig del av middagen på selveste julekvelden sammen med ribbe og medisterpølser eller sossiser og selvsagt surkål eller rødkål.

I denne oppskriften bruker jeg en blanding av medisterdeig og -farse. Det gjør at de ferdig kakene blir litt grovere enn om det bare blir brukt farse. Men siden farsen er spedd og krydret når man kjøper den, er jeg litt mer sparsom med krydderet enn jeg ville vært om jeg bare skulle ha brukt medisterdeig.

Ingredienser

  • 400 gr medisterdeig
  • 600 gr medisterfarse
  • 1 ½ ts salt
  • 1/2 ts pepper
  • 1/2 ts malt allehånde
  • 1/2 ts malt ingefær
  • 2 ss potetmel
  • 2 dl melk

Fremgangsmåte

  • Bland medisterdeigen og farsen med det tørre og spe med melk.
  • Bruk mixmaster slik at det blir ordentlig blandet.
  • Form kaker med en spiseskje og hånden. Deigen er nokså klissete så fukt hånden og skjeen med kaldt vann når du skal forme kakene.
  • Stek på middels varme til de er gyldenbrune. Lag brun saus etter anvisning på pose eller ved å lage bruning og spe med buljong.
  • La medisterkakene trekke ferdig i den brune sausen.

Server med rådkål og kokte poteter.
