For meg er julaften og ribbe to sider av samme sak. Jeg synes ribbe smaker helt vidunderlig når den kommer nystekt ut av ovnen med sprø svor og deilig kraft. Da, mer enn noen sinne lukter det jul i huset.

Jeg vet det er mange som er stresset på julaften fordi de er engstelige for at ribben ikke får sprø nok svor eller skal bli tørr. Metoden jeg har beskrevet nedenfor er ganske idiotsikker. I tillegg har jeg tre råd:

  • Ikke velg en ribbestykke som er alt for magert. Det er ikke denne dagen man skal telle kalorier. Det kan man gjøre resten av året.
  • Begynn med ribben i god tid. Den bør saltes 1-2 dager i forveien.
  • Stek ribben lenge nok, ca. 3 timer.

Når du står i butikken er det ofte to typer av juleribben du kan velge mellom – tynnribbe og familieribbe. Hva slags man velger blir en smakssak. Tynnribbe er vel det klassiske valget, men har man noen i huset som ikke er så begeistret for fet ribbe, kan familieribbe være et godt valg siden kotelettkammen følger med. Vi pleier alltid å ha koldtbord på 1. juledag, og der har den kalde ribben en selvsagt plass. Derfor steker jeg alltid et større stykke enn vi trenger til selve julemåltidet.

Server ribben med kokte poteter, surkål eller rødkål, medisterkaker og litt pene julepølser.

Ingredienser

  • 4 kg ribbe
  • 2-3 ss salt
  • nykvernet pepper
  • 1/2 l vann
  • --
  • Aluminiumsfolie

Fremgangsmåte

  • Dersom ribben er frossen, må den tas ut av fryseren og legges i kjøleskapet 3 dager i forveien.
  • To dager før ribben skal stekes saltes og pepres den rikelig på begge sider. Dekk ribben til med aluminiumsfolie og sett den tilbake i kjøleskapet. La den være i fred til den dagen den skal stekes.
  • Ta den ut av kjøleskapet et par timer før den skal stekes og legg den på kjøkkenbenken slik at den får romtemperatur.
  • Sett ovnen på 180 grader.
  • Hell kaldt vann i en langpanne og legg ribben oppi med svoren ned og dekk med aluminiumsfolie.
  • Damp ribben i ca. 1 time.
  • Ta ribben ut, ta av folien og snu ribben. Nå er det viktig å passe på at midten av ribben er det høyeste punktet, ellers er det vanskelig å få sprø svor. Klem evt. aluminiumfolie sammen til en klump som legges under ribben for å heve midten. Alternativt kan en skål opp ned gjøre samme nytte.
  • Sett ribben tilbake i ovnen og stek den i to timer til.
  • Dersom svoren ikke er sprø nå, sett på grillen - men pass nøye på. Grensen mellom sprø og svidd svor er fin, og et øyeblikks uoppmerksomhet kan ødelegge hele svoren. Dersom deler har blitt sprø kan disse dekkes til med aluminiumfolie, slik at de ikke blir brent mens resten får litt mer tid.
  • Ta ribben ut og la den hvile en stund mens sausen lages.
  • Hell kraften fra langpannen over i en gryte sammen med litt bruning.
  • La det koke opp og smak til sausen med litt sennep for syre og mer sting eller litt rips eller rognebærglele for litt sødme.
  • Skjær ribben i passe porsjonsstykker og server med nykokte poteter, medisterkaker, medisterpølser og surkål. Pynt gjerne fatet med svisker.
