Hjemme hos oss hører brente mandler julen til. Særlig mamma er glad i dem. Så når opphavet kommer til julefeiring må de være på plass. Jeg har imidlertid i alle år hatt inntrykk av at det er skikkelig klinete og mye styr forbundet med å lage dem. Derfor har jeg inntil nå overlatt det til andre (les: mamma). Men i år bestemte jeg meg for at det ikke går an, og at jeg skulle lage dem. Jeg surfet litt på nettet og fant en oppskrift som virket grei på hobbykokken.

Med brente mandler er det jo ikke akkurat ingredienslisten som er utfordrende. Det er det derimot fremgangsmåten som er. Det er særlig to ting som er viktige. Det ene er å ikke lage for stor porsjon. Da er det bedre å lage to små. Det andre er at sukkeret og vannet får koke til det gryner seg. Da fester sukkeret seg til hver mandel individuelt og det blir ikke bare én stor klump av alt. Dette fungerer, men nå er jeg jo litt usikker på hvordan det er med andre fremgangsmåter, da.

Ingredienser

  • 100 gr. sukker
  • 1/2 dl vann
  • 100 gr. mandler

Fremgangsmåte

  • Ha sukker og vann i en jernpanne og kok opp.
  • La det koke til det begynner å gryne seg.
  • Ha de i mandlene og rør. Hver mandel blir nå dekket av sukker. Fortsett å rør og etter hvert vil sukkeret begynne å karamellisere seg og de får den fine gyldne fargen. Pass på at de ikke blir brente.
  • Hell mandlene over på et stekebrett kledd med bakepapir og skill dem så godt det lar seg gjøre før knekken stivner helt.
  • Ha dem over på et glass når de er helt avkjølt.
