I Østerrike er Linzer kjeks en av de tradisjonell julekakene, og det er lett å forstå hvorfor. De ser så vakre ut med sitt hvite ytre og røde hjerte. Og så smaker de selvfølgelig veldig godt.

Hvert år når det nærmer seg jul er jeg på utkikk etter nye julekaker. Noen kaker bare må vi alltid ha, men jeg synes også det er spennende å prøve ut nye varianter. Noen blir hengende med, mens andre skiftes ut med atter nye. Jeg må innrømme at det var utseende som gjorde at jeg falt for disse i første omgang. Men jeg kan berolige med at det er mer enn en pent utseende for disse kjeksene.

Jeg fant oppskriften på en blogg som heter Li’l Vienna. Jeg har i grunnen ikke endret stort på oppskriften, annet enn at jeg i stedet for mandelmel, brukte malte mandler. Jo, og så droppet jeg kanel og tilsatte revet sitronskall i stedet. Det synes jeg ga kjeksene et lite løft.

Tradisjonelt skal kakene ligge en dag eller to før de spises slik at syltetøyet kan gjøre kjeksene litt myke. Det må man selvfølgelig ikke gjøre. De er gode når de er helt nybakte og fortsatt sprø også.

Ingredienser

  • 300 gr hvetemel
  • 200 gr kaldt smør
  • 100 gr melis
  • 100 gr malte mandler
  • 1 klype salt
  • skallet av 1/2 sitron
  • 2 eggeplommer
  • evt. 1 ss melk
  • Ripsgele

Fremgangsmåte

  • Bland mel, melis, malte mandler, salt og sitronskall .
  • Skjær smøret i små terninger og smuldre det i det tørre. Bruk evt. en matmølle og kjør det til det har blitt en grynete masse. Pass på å ikke arbeide for mye med deigen.
  • Kna eggeplommene inn i deigen slik at den samler seg. Dersom den fortsatt er for tørr, tilsett 1 ss melk.
  • Rull deigen til en pølse og pakk inn i plastfolie. Legg i kjøleskapet og la den ligge minst 1/2 time.
  • Forvarm ovnen til 180 grader.
  • Ta deigen ut og rull den ut til en tynn leiv på 2-3 mm. Bruk mel på kjevelt og benken for å hindre at deigen klistrer seg.
  • Stikk ut rundinger på ca. 7-8 cm. Stikk ut hjerter i halvparten.
  • Fortsett til all deigen er brukt opp.
  • Stek kakene i 8-10 minutter midt i ovnen. De skal så vidt bli litt gylne i kantene.
  • Legg kakene over på en bakerist så snart de lar seg flytte for å kjøle helt av.
  • Når kakene har blitt helt avkjølt. Dryss melis på de kakene med hull i midten. Smør et tynt lag med ripsgele på de hele kjeksene.
  • Legg kjeksene sammen slik som på bildet.
  • Oppbevar kjølig i en tett kakeboks.
