På åtti-tallet var det kjempepopulært med bakt potet. Det var ikke få fredags- eller lørdagskvelder på byen som ble avsluttet med en bakt potet fra en vogn utenfor Nationalteatert. Potetene ble fylt med rømme, mais, ost, bacon og sikket mye annet også. Det var en herlig avslutning på en lang kveld. Men så kom kebaben og potetene forsvant sakte men sikkert ut av (by)bildet. Det er  blitt laget bakte poteter rundt i de tusen hjem til grillmaten og biffen, men da har de sikkert blitt servert med smør, salt og pepper, og ikke alt det deilige stashet fra det glade åttitallet. Nå vil jeg imidlertid vekke denne retten til live igjen og serverer bakt potet med pinnekjøtt og wasabirømme.

Jeg synes virkelig bakt potet med pinnekjøtt ble en superhit. Den myke og milde poteten kler skikkelig godt følge den har fått av det salte pinnekjøttet og rømmen smakssatt med wasabi for ekstra sting. Det er lite som minner om julemiddagen tidligere i uken, men det er vel i grunnen bare en fordel nå. Variasjon fryder jo som kjent.

Ingredienser

  • 4 bakepoteter
  • litt olivenolje
  • 200 gr pinnekjøtt (eller så mye som du har)
  • 2 dl lettrømme
  • 1 ts wasabi, eller mer
  • 1 skvis sitronsaft
  • friske urter, persille eller dill

Fremgangsmåte

  • Sett ovnen på 220 grader varmluft.
  • Vask potetene godt og tørk dem. Pakk inn i aluminiumsfolie.
  • Bak potetene til de er helt møre, ca. 1 time. Ta av folien når det er ca. 15 minutter igjen og pensle potetene med litt olje. Da blir skallet sprøtt og du kan spise det også.
  • Sett samtidig pinnekjøttet inn i oven sammen med potetene så det blir varmt.
  • Bland rømme, wasabi og sitron sammen og smak til med salt og pepper og rør inn litt hakkede urter.
  • Ta poteter og pinnekjøttet ut av ovnen og riv pinnekjøttet fra hverandre til småbiter.
  • Server potetene med rømmesaus og pulled pinnekjøtt.

I Ålesund står det fortsatt ei vogn med laaang kø på fredags- og lørdagskvelder. De serverer bakt potet. Så anbefaler en bytur her om du savner skikkelig nattmat

Er ikke ofte i Ålesund, men skal huske på det neste gang jeg er der. Skikkelig godt utpå kvelden. 🙂
