Da vi pusset opp kjøkkenet fikk vi oss dampovn. Fikk jeg dampovn, vil nok Husbond si. Nok om det. Dampovnen har blitt brukt av og til, mest til grønnsaker og fisk. Men ikke så mye til kjøtt. Men nå som adventstiden nærmer seg, kommer jo pinnekjøttet på menyen. Dette er jo kjøtt som skal dampes, så da måtte jeg jo bare prøve det i dampovnen. Riktignok ble det uten bjørkepinner, men når sant skal sies er det ikke noe jeg bruker når jeg gjør det på gamlemåten i gryte heller. Da bruker jeg damprist. Det er ikke noe galt med gamlemåten. Det har blitt utmerket pinnekjøtt i mange år her i huset, men ny teknologi frister jo til å utforske muligheten.

Når sant skal sies var det ikke store forskjellen i metode. På gamlemåten må man passe på at kjøttet ikke koker tørt. Det kan jo ikke skje på samme måte i en dampovn, men jeg måtte fylle på vann en gang i løpet av dampetiden. Det tok ganske lang tid, over fire timer. Men at det skyldes kjøttet kan jeg ikke utelukke, for jeg kan ikke forstå at det tar lengre tid i en dampovn. Den største forskjellen kom når kjøttet var ferdig dampet. Jeg synes alltid det er ganske grisete med dampristen i bunnen av kjelen. Nå var alt samlet i en egen bakke som var mye greiere å vaske enn den gamle dampristen. Så kommer jeg til å gjøre det i dampovnen flere ganger – ja. Dette var en forbedring så langt jeg kan se.

Server pinnkjøttet med kokte poteter og kålrabistappe. Det blir garantert en suksess.

Er du som meg har du nok laget litt ekstra. Har du mye rester kan du fryse ned og ta opp senere. Da er det bare å legge kjøttet rett under grillen i oven. Lettere kan det ikke bli. Men du kan også  trylle restene og prøve deg på en av disse oppskriftene.

Ingredienser

  • 2 kg pinnekjøtt

  • 4 melne poteter
  • 4 ss pinnekjøttkraft
  • 2 ss smør
  • salt, pepper og muskat

Fremgangsmåte

  • Legg pinnekjøttet i vann over natten.
  • Sett dampovnen på 100% damp og 100 grader.
  • Ta kjøttet ut av vannet og legg det i den perforerte bakken. Sett en tett bakke under og den perforerte bakken over.
  • Damp kjøttet i 3-4 timer til kjøttet er så mørt at det løsner fra bena.
  • Mens kjøttet damper skrell kålrabien og del den i biter. Kok den mør og tilsett de melne potetene mot slutten av koketiden slik at de blir ferdige samtidig.
  • Kok også poteter til å ha ved siden av.
  • Ta kjøttet ut og legg det på en stekeplate kledd med aluminiumsfolie. Sett vanlig ovn på grill og skjerp kjøttet noen minutter under grillen. Pass på at det ikke blir svidd.
  • Lag kålrabistappe ved å mose kålrabien og potetene. Bland inn litt av pinnekjøttkraften som har samlet seg i den tette bakken under dampingen av pinnekjøttet. Smak til med salt, pepper og litt muskat.Pinnekjøttet er ganske salt, så vær gjerrig med saltet i stappen. Rør inn et par skjeer smør rett før servering.
