OKTOBER – Høsten er dessverre ikke min favorittårstid, men ferskt lammekjøtt er definitivt noe å glede seg til.  Norsk lammekjøtt er av veldig høy kvalitet, og har en deilig smak. Sikkert takket være beite på fjellet hele sommersesongen. Lenge var høstens lammekjøtt forbeholdt søndagen med lammestek og fårikål. Men nå er tilbudet av lammekjøtt blitt mye bedre og det er lettere å få tak i flere forskjellige produkter. Her har jeg samlet mine 5 beste oppskrifter med lam, og det er både festmat og hverdagsretter.

Dette er skikkelig kosemat  på linje med lasagne og mac’n cheese. Her er det kjøttdeig og rotgrønnsaker under en deilig, luftig potetdyne. Har du ikke prøvd å lage dette før, er det på høy tid, for dette er virkelig deilig.

Fransk lammegryte

Hva er vel deiligere enn å komme hjem fra en tur og kjenne lukten av en kjøttgryte som  forsiktig står og putrer på komfyren.  Denne lammegryta krysser av alle boksene for meg. Mørt kjøtt, fyldig saus og grønnsaker.

Lammekebab med yoghurtsaus 

Her er en kjapp hverdagsmiddag med lammekjøttdeig. Krydder som spisskummen og koriander kler lammekjøttet godt og er en spennende kombinasjon. Kebabene kan gjerne grilles om det er vær til det, ellers blir de godt også når de stekes i stekepannen.

Surrret lammestek

Dette er definitivt et av høydepunktene på høsten. En skikkelig søndagsmiddag med lammestek, fløtegratinerte poteter, og masse grønnsaker ved siden av. Og når du allikevel lager en stek, kan du like gjerne invitere noen flere for jobben er jo den samme og det er så hyggelig å spise middag sammen.

Lammeskav med hummus

Reinsdyrskav har lenge vært en ting i frysedisken, men nå har det jommen dukket opp lammeskav også. Dette er hurtigmat av dimensjoner. Kjøttet er skåret i så tynne skiver at det stekes på null komma null. Hva du vil ha av tilbehør bestemmer du jo selv, men her har jeg laget hummus, syltet rødløk og bakt gresskar.

Fun fact om lam

Sau er et av de første dyrene som ble domestisert allerede for 11.000 år siden. De eldste knokler av husdyr som er funnet i Norge er av sau. Så vi kan trygt si at sau og lam er tradisjonsmat her i landet.
