Shepherd’s pie – what’s not to like? Et høyst betimelig spørsmål synes jeg. Shepherd’s pie er alltid godt, om det lages med lammekjøtt som visstnok skal være det autentiske, med oksekjøtt eller som her med grønnsaker og linser. Her kommer min oppskrift på vegetarisk shepherd’s pie. Det er rett og slett en nydelig middagsrett som jeg tror alle vil like. Den har en fyldig tomatsaus med masse rotgrønnsaker og linser og toppet med et tykt lag potetstappe. Så blir hele herligheten gratinert i ovnen slik at det blir en fin gyllen overflate.

I tomatsausen har jeg brukt gulrot, sellerirot og løk. Men du kan gjerne bruke flere eller andre grønnsaker også. Persillerot og pastinakk passer også fint. Med litt squash og aubergine får retten en lett Middelhavsdreining. Noen synes det er godt å bruke søtpotetpure i stedet for potetstappe, eller lage en blanding av de to. Valget er ditt. Jeg kan nesten garantere deg at det uansett blir en god vegetarisk shepherd’s pie. Savner du allikevel kjøttet, kan du se på denne oppskriften på shepherd’s pie.

Ingredienser

  • 2 gulrøtter
  • 1/4 sellerirot
  • 1 stor løk
  • 2 fedd hvitløk
  • 2 ss olje til steking
  • 2 dl grønne linser
  • 4 dl grønnsaksbuljong
  • 1 ts rødvinseddik
  • pepper og evt. salt
  • laurbærblad
  • 1 boks tomater
  • 800 gr melne poteter
  • 2 dl melk
  • 50 gr smør
  • 1/2 ts salt

Fremgangsmåte

  • Riv gulrøtter, sellerirot og løk fint på et rivjern. Hakk hvitløken fint.
  • Fres grønnsakene i en gryte i oljen til de blir myke.
  • Tilsett linsene, grønnsaksbuljongen, laurbærbladet, eddiken og tomatene.
  • La alt koke til linsene er møre. Litt avhengig av linsetype tar det 20-30 minutter.
  • Forvarm ovnen til 220 grader varmluft.
  • Mens sausen koker, lag potetstappen.
  • Kok potetene i vann UTEN salt.
  • Når potetene er møre, mos dem med melk og smør. Mengden melk som trengs kan variere med hvor mye stivelse det er i potetene. Stappen skal være myk, men ikke flytende. Tilsett mer melk om nødvendig.
  • Ha sausen i en ildfast form og bre potetstappen over.
  • Sett formen inn i ovnen og stek i ca. 15 minutter. Potetstappen skal få fin farge.
