Middager med kjøttdeig eller potetstappe er alltid populært, så denne burde bli en sikker vinner på mange middagsbord. Cottage pie består av en smaksrik men «snill i smaken» kjøttsaus dekket med fluffy potetstappe som til slutt får en tur under grillen.

Cottage pie og den kanskje mer kjente shepherd’s pie er egentlig søsken. Den aller vesentligste forskjellen mellom de to er at mens det skal være lammekjøttdeig i en shepherds pie, bruker man oksekjøtt i en cottage pie. Utover kjøttet inneholder sausen rotgrønnsaker, krydder og urter som kokes inn med kjøttkraft. Hva slags rotgrønnsaker man bruker kan jo variere litt, og her er det stort potensial for å bruke det man har og liker. Jeg har brukt gulrøtter og stangselleri, men her kunne jeg like gjerne ha brukt vanlig selleri, pastinakk eller persillerot.  Det er i hvert fall en fin måte å få ryddet litt opp i grønnsakskuffen i kjøleskapet.

Når kjøttsausen er ferdig kokt legges et lag med potetstappe på toppen. På bildet har jeg flottet meg litt og brukt en sprøytepose med stjernetyll og laget fine topper. I en travel hverdag er det kanskje ikke helt realistisk, men det går like fint an å bare legge potetstappen på toppen og fordele den utover hele formen. Smaken blir jo den samme.

Ingredienser

  • 400 gr karbonadedeig
  • Olje til steking
  • 2 ss tomatpure
  • 1 gulrot
  • 2 stilker stangselleri
  • 1 løk
  • 1 fedd hvitløk
  • 1 laurbærblad
  • 1 ts tørket timian, eller 4-5 kvister fersk
  • 1/2 l oksekraft eller buljong
  • 1/2 ts Worcestershire saus
  • 1 ss hvetemel
  • 800 gr poteter
  • 100 gr smør
  • 2 dl melk
  • 1/2 ts salt
  • nykvernet pepper

Fremgangsmåte

  • Forvarm ovnen til 220 grader med grillelement.
  • Hakk løk, hvitløk, gulrot og stangselleri fint og sett til side.
  • Varm oljen i en gryte og stek karbonadedeigen til den har fått fin farge.
  • Tilsett grønnsakene og fres i ytterligere 5 minutter.
  • Rør inn hvetemelet og tomatpureen.
  • Ha i kraft, Worcestershire saus, laurbærblad, timian, salt og pepper og la det småkoke i min. 20 min.
  • Mens kjøttsausen koker. Skrell potetene og skjær i grove biter. og kok opp i vann UTEN salt.
  • Kok til potetene er møre. Hell av vannet og la potetene dampe av seg. Mos og tilsett smør og melk. Bruk evt. mer melk om stappen er tørr. Visp godt til du får en fluffy stappe og smak til med salt.
  • Smak på kjøttsausen og juster med mer krydder om ønskelig.
  • Hell sausen over i en ildfast form og legg potetstappen på toppen. Dersom du vil gjøre det ekstra festelig kan du sprøyte ut stappen i mønster som jeg har gjort, men det går selvsagt helt fint å bare legge stappen oppå og glatte ut.
  • Sett formen inn i ovnen og la den steke til toppen begynner å ta farge.

Server straks, gjerne med en salat ved siden av. Vel bekomme.
