Alle kan vel trenge en lasagneoppskrift til? Det kan i hvert fall jeg, og denne ble riktig god. Dette er en lasagne med grønne plater og det har du kanskje ikke laget før? Denne har en litt kremet kjøttsaus, masse bechamelsaus og ost mellom de grønne lasagneplater som har en mild smak av brennesle og ramsløk. Dessverre falmer grønnfargen en del når lasagnen blir stekt i ovnen.

Denne oppskrifte er basert på en oppskrift jeg fant på godt.no av Sven Erik Renaa. Den skal igjen visstnok være en tolkning av hans bestemors oppskrift. Men som alltid med oppskrifter så har de en tendens til å forandre seg litt på veien, alt etter hva kokken har til rådighet og liker.

En liten advarsel, dette er ikke et hverdagsprosjekt da det tar flere timer å lage denne lasagnen. Kjøttsausen skal koke gjerne i tre timer, pastaen skal knas, hvile og rulles og så skal den settes sammen før den skal steke i ovnen i en halv time. Men om du holder ut blir du altså belønnet med en svært god lasagne med grønne plater.

Ingredienser

  • 70 gr brennesle
  • 30 gr ramsløk
  • 3 egg
  • 400 gr hvetemel (pito 00)
  • 1 klype salt
  • 1 gulrot
  • 1 selleristilk
  • 2 små gule løk
  • olje til steking
  • 300 gr karbonadedeig
  • 300 gr kjøttdeig av svin
  • 2 ss tomatpure
  • 2,5 dl oksekraft
  • salt og pepper
  • oregano
  • 0,5 dl fløte
  • 80 gr smør
  • 80 gr hvetemel
  • 1 l melk
  • revet muskatt
  • 150 gr mozzarella
  • revet parmesan

Fremgangsmåte

  • Rens og skyll urtene godt. Husk å bruke gummihansker når du behandler brenneslen. Kok opp vann og forvell bladene i 3 minutter. Ta bladene opp av gryten og legg i iskaldt vann. Klem så mye vann som mulig ut av bladene og finhakk.
  • Bland mel og salt og legg det i en haug på benken. Lag et krater i midten og knekk eggene oppi krateret sammen med de finhakkede bladene. Kna deigen sammen til den blir jevn og litt spenstig. Den skal komme ut igjen når du trykker på den med en finger, Regn med at det tar ca. 10 minutter. Pakk inn i plast og legg i kjøleskapet for å hvile.
  • Finhakk gulrot, stangselleri og løk og fres dette i olje i en gryte i omtrent 10 minutter. Tilsett så kjøttet og stek til det blir brunt. Tilsett så tomatpuré, oksekraften og krydderne. La det koke lenge, gjerne et par timer. Tilsett fløten og la det koke ytterligere en time. Smak på sausen og kjenn om den trenger mer krydder.
  • Smelt smøret i en ny gryte og rør inn melet. Spe med melken litt etter litt og la det koke forsiktig i 5 minutter. Smak til med salt, pepper og revet muskatt. Sett til side.
  • Rull ut pastadeigen til plater. Bruk en pastamaskin om du har det, hvis ikke rull ut så tynt du klarer med et kjevle. La de ferdig utrullede platene ligge og tørke i 10-15 minutter før du koker dem i ett minutt i rikelig saltet vann. Legg dem på et kjøkkenhåndkle så de får dryppet av seg.
  • Riv parmesan og skjær mozzarellaen opp i småbiter.
  • Hell litt olivenolje i bunnen av formen du skal bruke og ha litt kjøttsaus i bunnen. Legg på plater og et nytt lag med kjøttsaus. Ha deretter over litt av den hvite sausen og dryss noen biter med mozzarella. Fortsett i samme rekkefølge til det ikke er mer igjen og avslutt med pastaplater hvitsaus og mozzarella og parmesan. Prøv å få til 4-5 lag med plater.
  • Stek i oven på 200 grader i ca. 30 minutter.

Tips

Et tips til koking av lasagneplatene: Jeg kokte lasagneplatene mens jeg satte sammen lasagnen. Siden de bare skulle koke i ett minutt, synes jeg dette var en bedre løsning enn å ha ferdigkokte plater over hele kjøkkenbenken. Jeg hadde bare gryten med saltet vann på kok mens jeg holdt på så la jeg oppi en og en plate for å unngå at de klistret seg sammen. Jeg trengte to plater til ett lag så det tok altså to minutter mens jeg allikevel la på kjøttsaus og hvitsaus.
