. flkjlI dag byr jeg på en skikkelig retro-rett. For det er vel akkurat det ostesuffle er? Den hadde sin storhetstid en gang på 70-tallet, selv om retten visstnok har røtter tilbake til det franske hoffet på midten av 1700-tallet. Men altså på 70-tallet, da Oslo hadde 2 utenlandske restauranter – Ben Josef på Solli plass og Bella Napoli i Storgata. Da synes vi hvitløk var litt på kanten fordi vi kunne få dårlig ånde. Og pizza var en eksotisk rett som ikke var å finne i frysedisken på super’n.  Det var da at ostesuffleen altså hadde sin storhetstid. Da var det nok både litt eksotisk og sofistikert å servere en ostesuffle på lørdagskvelden. Men så vant jo taco og pizza kampen om lørdagskvelden og  denne franske saken ble skjøvet helt ut på sidelinjen. Helt til i dag, hvor jeg ser at den dukker opp med jevne mellomrom både i Instagram-feeden min og andre sider. Kanskje fordi vi har fått bedre tid i det siste, eller rett og slett fordi det smaker godt?

For det er ingen tvil om at dette smaker godt. Det er som å spise en solvarm makrellsky med ostesmak. Så lett er den i munnen nemlig. Og ostesmaken er helt tydelig. Jeg har brukt den sveitsiske osten gruyere, men det går fint an å bruke annen ost også, men bruk gjerne en ost med litt sterk smak. Det går også fint an å blande flere oster også, og dermed er det en fin måte å bruke opp osterester på. Som en kontrast til ostesmaken, liker jeg å servere ostesuffle sammen med en grønn salat med en vinaigrette med skikkelig snart. Bruk gjerne både litt ekstra vineddik og dijonsennep i for å jekke opp syrenivået.

Det er vanlig å si at det er gjestene som skal vente på suffleen og ikke omvendt. Og det er faktisk helt sant. Etter en liten stund faller nemlig suffleen sammen. Den smaker riktignok like godt , men ser ikke så imponerende ut lenger. Det skjedde meg da jeg lagde dem i dag. Rett etter at jeg hadde tatt dem ut av ovnen, kunne jeg høre at luften sivet ut. Så fotograferingen ble gjort i en fei, kan jeg love deg. På bildet har den allerede falt sammen en god del. Du kan imidlertid gjøre en del av retten klar på forhånd, men må altså gjøre den ferdig etter at gjestene har kommet.

Ingredienser

  • 3 ss smør + 1 ts
  • 3 ss hvetemel
  • 3 dl kokende melk
  • 1/2 ts salt
  • 1 klype kayennepepper
  • 1 klype muskatnøtt
  • 4 egg delt i hviter og plommer
  • 2 dl fint revet gruyere

Fremgangsmåte

  • Forvarm ovnen til 200 grader.
  • Finn frem en stor suffleform, eller 4 små. Smør godt med smør på sidene og i bunnen og dryss med litt av osten og vend formen rundt slik at alle flater blir dekket med ost. Sett til side.
  • Riv osten og sett til side.
  • Kok opp melken. Samtidig smelt smør i en annen gryte og tilsett hvetemelet.
  • Når smør/melblandingen ikke skummer lenger, tilsett melken og rør kraftig slik at det ikke blir klumper. La det koke et par minutter på middels varme under omrøring. Det skal nå ha blitt en temmelig tykk hvit saus.
  • Rør inn krydderet.
  • Tilsett en eggeplomme og og rør til den er helt innarbeidet i sausen. Fortsett med resten av eggeplommene.
  • Bland inn osten og rør godt.
  • Pisk eggehvitene med en klype salt stive.
  • Vend stivpiskede eggehvitene i flere omganger forsiktig inn i suffleblandingen.
  • Hell suffleblandingen over i de(n) smurte formen(e) og fyll opp til formene er ca. 2/4 fulle. Glatt overflaten med en slikkepott slik at den blir så jevn som mulig.
  • Sett straks inn i ovnen.
  • Stek suffleen i ca. 30 minutter. Da skal den ha hevet seg godt over kanten og fått en fin lysebrun overflate. Lager du porsjonsformer, kan du halvere steketiden.

Server straks med loff, en grønn salat med en syrlig vinaigrette ved siden av. Sylteagurker er også godt ved siden av.

Tips

Jeg har brukt gruyere, men det går fint an å bruke en annen type ost også som f.eks parmesan, Jarlsberg eller en cheddar.
