Pai er noe de fleste liker, og en løkpai som dette er nok ikke noe unntak. For i denne paien er det et lett og flakete paiskall, søt karamellisert løk og en eggestand med masse deilig ost i. Så hva mer kan man ønske seg?

Denne paien egner seg godt som en lunsjrett, eller på et koldtbord. Den kan serveres varm eller romtemperert, og den kan godt lages dagen i forveien, kjøles ned og bare tas ut i god tid før servering neste dag. Server paien sammen med en grønn, frisk salat med en litt syrlig vinaigrette, og du har et deilig måltid.

Beskrivelsen i oppskriften kan nok se litt omstendelig ut, men det er ikke en spesielt vanskelig oppskrift. Faktisk synes jeg denne paideigen var enklere å arbeide med enn mange andre oppskrifter på mørdeig jeg har prøvd.

Ingredienser

  • 140 gr hvetemel
  • 1/2 ts salt
  • 115 kaldt gr smør
  • 1/2 dl iskaldt vann
  • --
  • 2 digre løk
  • 3 ss smør
  • 1 ss hvetemel
  • 2 egg
  • 1,5 dl kremfløte
  • 1/2 ts salt
  • nykvernet pepper
  • 1 kn.odd malt muskat
  • 1 dl revet vellagret ost

Fremgangsmåte

  • Ha hvetemelet og saltet i en foodprosessor med kniv.
  • Skjær smøret i små terninger og ha oppi sammen med melet.
  • Kjør mel og smør sammen til det blir grynete.
  • Hell det iskalde vannet i og kjør til deigen begynner å samle seg.
  • Ta deigen ut og samle den til en flat disk. Pakk inn i plast og la deigenhvile i kjøleskapet i minst en time, og gjerne over natten.
  • Sett ovnen på 200 grader.
  • Rull deigen ut til til den er ca. 3 mm tykk sirkel. Det skal da være nok til en paiform på 25 cm.
  • Legg deigen over i formen og prikk hull i bunnen. Legg på et stykke smurt aluminiumsfolie og fyll med bakevekter eller tørre bønner. Stek i ca. 8 minutter.
  • Ta ut bakevektene og aluminiumsfolien og stek i 3 min til. Ta ut og sett til side.
  • Rens løken og skjær den i tynne skiver.
  • Varm smøret i en stekepanne og stek løken på middels varme til den har blitt myk og gyllen. Dette tar tid, men ikke fall for fristelsen til å sette opp temperature for høyt, for da kan løken bli brent.
  • Når løken ser ferdig ut, tilsett hvetemelet og rør det inn. Stek i ytterligere to minutter. La løken avkjøle seg litt
  • Bland egg, fløte salt, pepper og muskat i en bolle. Tilsett løken og halvparten av osten.
  • Hell blandingen over i paiskallet og strø resten av osten oppå.
  • Stek i ca. 25 minutter. Ostemassen skal da ha satt seg, og det skal være en fin gyllen overflate.

Server varm eller romtemperert sammen med en frisk salat.
