Endelig begynner tomatene å smake av noe igjen. Det er aldeles herlig og noe jeg ville feire ved å lage en enkel tomatgalette. En galette er en slags  pai som lages uten paiform. Den er derfor mer rustikk enn en vanlig pai, som kanskje heller ikke går for å være det mest raffinerte i den kulinariske verden. Men det betyr jo ikke så mye, for den denne galetten ikke har av utseende tar den definitivt igjen i smak.

Denne galetten er deilig smaksrike tomater på en seng av fetaost og urter omgitt av en flakete, sprø deig. Tomat og fetaost er en av mine favorittkombinasjoner i sommerhalvåret når tomatene er fulle av sødme og smaker av solskinn. En liten digresjon, men prøv det på et knekkebrød med litt gressløk, nykvernet pepper og noen dråper olivenolje – så skjønner du hva jeg mener.

Men denne galetten den smaker deilig av sommer. Spis den varm rett fra ovnen med en salat ved siden av til middag, eller avkjøl den litt og ta den til kvelds med et lite glass vin til mens du kjenner de siste varme solstrålene. Det eneste den ikke egner seg så godt til er å ta med på picknick. Det skyldes ikke smaken, men fordi deigen er så sprø og ikke ligger beskyttet  en paiform, vil den ganske sikkert gå i stykker i kurven. Men del den gjerne med venner og lag kanskje to stykker for en tomatgalette forsvinner fort.

For å unngå at bunnen blir våt og lite delikat av tomatsaften, er det to ting som gjelder. Det ene trikset er å lokke mest mulig fuktighet ut av tomatene før de legges oppå deigen. Det gjøres med å drysse tomatskivene med salt og la dem dryppe av seg en stund, og så legge dem over på litt kjøkkenpapir så det kan trekke til seg enda mer fuktighet. Det andre trikset er å legge ost under slik at den danner en liten barriere mellom tomatene og galettedeigen.

Ingredienser

  • 180 gr hvetemel
  • 1/2 ts salt
  • 2 ss tørket oregano
  • 90 gr kaldt smør
  • 3 ss kaldt vann
  • 1 ts eplesidereddik
  • 1 egg, sammenpisket
  • --
  • 4 middels store tomater
  • salt
  • 200 gr fetaost
  • 1 fedd hvitløk
  • Fersk timian og oregano
  • Nykvernet pepper

Fremgangsmåte

  • Bland hvetemel, salt og oregano.
  • Skjær smøret i små ndre biter og smuldre det inn i de tørre ingrediensene. Når blandingen har blitt grynete tilsettes vannet sammen med eplesidereddiken. Kna det sammen til en deig, uten å arbeide for mye med deigen.
  • Pakk deigklumpen inn i plastfolie og legg den i kjøleskapet i minst 1 time, gjerne lengre.
  • Forvarm ovnen til 200 grader.
  • Skjær tomatene i tynne skiver og legg dem i et dørslag og dryss over litt salt. La det stå 10-15 minutter.
  • Ta deigen ut av kjøleskapet og kjevle den ut til en runding på størrelse med en stor pizza. Legg over på et bakepapir og flytt over på et stekebrett.
  • Smuldre fetaosten og legg den utover deigen, men la de ytterste 5 cm være uten fyll.
  • Skjær hvitløken i tynne skiver og legg oppå osten og dryss på litt timian og oregano.
  • Legg tomatene over på et tørkepapir slik at mest mulig fuktighet suges opp.
  • Legg tomatene på osten og kvern over pepper og dryss på mer urter.
  • Brett deigen inn over fyllet, og pensle kanten med det sammenpiskede egget.
  • Stek galetten i ca. 40 minutter.

Server med en frisk salat og gjerne et glass rosévin til.
