Dette er skikkelig digg sommermat, og nå skinner solen og det er varmt i været – endelig. Da er det på tide med en skikkelig sommer grill rett. Første gang jeg spiste kyllingsatay var på et gatemarked et sted i Chinatown i Kualalumpur. Den gangen, for mer enn 20 år siden, var dette skikkelig eksotisk og hadde smaker som vippet meg fullstendig av pinnen. Det var rett og slett dødsgodt og så enkelt. Små kjøttstykker av kylling, okse og svin trædd på trespyd og grillet på enkle, tilsynelatende primitive kullgriller. Peanøttdippen kom ved siden av. De hadde også satay laget av okse- og svinekjøtt. Det ble en del spyd på meg for å si det sånn, alt var godt.

Disse kyllingsatayene er sikkert ganske langt fra originalen, men nær nok til å sende meg tilbake til det lille torget i Chinatown. Ikke la deg skremme av den lange ingredienslisten.  De fleste har du sikkert allerede, og hvis ikke kan du like gjerne gå til innkjøp, for jeg tipper at dette vil bli en favoritt i sommer uansett. For så godt er det.

Ved siden av kyllingsatay serverer jeg en sommerlig nudelsalat. I dressingen til salaten har jeg brukt en sånn knøttliten, illsint thai chili. Det gjør dressingen temmelig hot. Du kan også bruke vanlig rød chili og juster mengden slik at dressingen blir passe hot for deg.

Ingredienser

  • 600 gr kyllingfilet
  • 1 dl kejap manis
  • 1 ss shriracha
  • 1 ss rapsolje
  • 1 ss soyasaus
  • 1 ss sesamolje
  • 1 ss revet ingefær
  • 1 fedd revet hvitløk
  • 16 grillspyd
  • --
  • 1 pakke risnudler
  • 1 rød spisspaprika
  • 1 gulrot
  • 1/4 nykål
  • 1 1/2 lime, saften
  • 2 ss fiskesaus
  • 1 ss rapsolje
  • 2 ts brunt sukker
  • 1 rød thai chili finhakket
  • 1 finhakket fedd hvitløk
  • koriander
  • --
  • 1/2 glass peanøttsmør
  • 1/2 glass vann
  • resten av marinaden

Fremgangsmåte

  • Legg grillspydene i vann minst 30 min før du starter med resten.
  • Bland sammer kejap manis, shriracha, soyasaus, sesamolje, ingefær og hvitløk og bland godt til en marinade.
  • Skjær kyllingen i 1x1 cm biter og træ på grillspydene.
  • Pensel marinaden på grillspydene og la det stå i minst 1 time, gjerne lenger i kjøleskapet.
  • Kok opp vannet og bland godt med peanøttsmøret.
  • Rør inn resten av marinaden og sett til side.
  • Kok nudlene som anvist på pakken og klipp den opp i mindre biter.
  • Skjær paprikaen og gulroten i fyrstikkstore biter og finsnitt kålen.
  • Bland ingrediensene til dressingen; limesaft, fiskesaus, rapsolje, sukker, chili og hvitløk.
  • Bland alle grønnsakene med dressingen.
  • Fyr opp grillen og stek spydene ca. 2 min på hver side.

Server grillspydene sammen med salaten og peanøttsausen til å dyppe kyllingen i. Vel bekomme.
