Har du sett den reklamen der Vasselina Bilopphøggers sitter i stua og ramser opp all julematen de har spist. Det er ikke vanskelig å leve seg inn i den situasjonen, for det kan jo bli litt mye julemat etterhvert. Det som er litt dumt, er jo at mange fortsatt sitter med mye rester av julematen.  Heldigvis er det ikke mye som skal til for å forvandle de gamle ribberestene til noe helt nytt og spennende, som for eksempel sommerruller med ribbe.

Sommerruller er en herlig blanding av forskjellige friske grønnsaker, litt proteiner og deilige asiatiske smaker holdt sammen av tynt rispapir. Her har jeg laget sommerruller med ribbe som er marinert i litt soyasaus-saus og brukt grønnsaker jeg har i huset. Resultatet ble noen skikkelig digge ruller som var en nytelse både for ganen og øyet. Det kan jo bli litt mye brun mat i julen. På ribben var det litt svor som ga deilig crunch. Dersom du ikke har svor kan hakkede nøtter også brukes til å gi noe litt crunchy.

Sommerruller er faktisk en veldig fin måte å bruke opp små rester. For det er ikke nødvendigvis så mye som skal til. I disse kan man nemlig med stort hell putte mye av julematen. I dette tilfellet har jeg altså brukt ribbe, men det går også fint med kalkun, pinnekjøtt, skinkestek eller juleskinke. På grønnsaksfronten har jeg brukt gulrot, rådkål, brokkolistilk, agurk og salat, men her er det bare å bruke det du måtte ha. Frukt som appelsin, klementiner eller mango kan være godt og det samme kan nøtter være. Bruk det du har og ikke vær redd for å eksperimentere.

Ingredienser

  • 8 rispapir
  • 1 liten gulrot
  • 1 brokkolistilk
  • 1/3 agurk
  • litt rødkål
  • 8 blader av hjertesalat
  • 1/2 nøste glassnudler
  • 1-2 biter kald ribbe
  • 2 ss soyasaus
  • 1 ts riseddik (eller hvitvinseddik)
  • 5 dråper sesamolje
  • litt finhakket chili (kan droppes)

Fremgangsmåte

  • Begynn med å skjære ribben i tynne strimler.
  • Bland sammen soyasaus, riseddik, sesamolje og finhakket chili, og legg kjøttet oppi til marinering.
  • Kok opp vann og legg glassnudlene oppi og la dem trekke til de har blitt myke (se instruksjon på pakken).
  • Skjær gulrot, brokkolistilk, agurk og rødkål i fyrstikktynne strimler.
  • Hell varmt vann i et ildfast fat eller annen litt stor beholder. Den må romme rispapiret.
  • Legg ett rispapir i det varme vannet i 1/2 min. Ta det opp, og legg det på benken foran deg. Det skal ha blitt litt mykt, men ikke helt gjennommykt.
  • Legg på 1 salatblad på nedre halvdel av rispapiret og litt av hver ingrediens oppå salatbladet. Brett kanten nærmest det over fyllet og deretter sidene sammen over fyllet. Rull så alt sammen til en stram rull.
  • Forsett til det ikke er mer fyll igjen.

Server som de er eller med resten av marinaden som dip.

Tips

Det går fint å bruke andre grønnsaker, frukt og nøtter eller proteinkilder også. Ta det du har.
