Alle liker vel lasagne, og det trenger slett ikke være kjøtt i for at det skal falle i smak. De aller fleste tenker vel på smaksrik kjøttsaus, kremet ostesaus og pastaplater når de tenker på lasagne. Men en vegetarlasagne der kjøttsausen er byttet ut med en like smaksrik linsebolognese er absolutt ikke å forakte. Så dersom du elsker lasagne, men  vil kutte ned på kjøttet uten å gå på kompromiss med smaken bør du prøve denne vegetarlasagnen. Du vil garantert ikke angre. Vegetarlasagne er kanskje ikke et prosjekt for den dagen du kommer sliten hjem og bare vil ha noe godt å spise raskt. Men har du tid er den som sagt absolutt verdt arbeidet.

Ingredienslisten ser kanskje avskrekkende ut, men med unntak av tørket steinsopp er det ingredienser som du sannsynligvis har allerede. Og når det gjelder den tørkede steinsoppen vil jeg absolutt anbefale at du gjør et forsøk på å få tak i det, for den gjør mye for smaken. Velassoterte butikker har det, eller kan sikkert skaffe det.  Får du ikke tak i det, kan du bruke fersk aroma-, portobello eller shitakesopp som finhakkes. Ikke dropp soppen helt, for den gir masse umami til retten.

Ingredienser

  • 25 gr tørket steinsopp
  • 1 stor løk
  • 2 gulrøtter
  • 3 stilker stangselleri
  • olje til steking
  • 1/2 squash
  • 2 fedd hvitløk
  • 1 ss tomatpuré
  • 2 bokser knuse tomater
  • 1 dl tørre røde linser
  • 1 ss tørket oregano
  • 1 ts salt
  • nykvernet pepper
  • 2 ts balsamicoeddik
  • 2 ts sukker
  • ---
  • 60 gr smør
  • 80 gr hvetemel
  • 9 dl lettmelk
  • 1/2 ts salt
  • 1 kryddermål muskat
  • 200 gr revet Jarlsberg
  • ---
  • lasagneplater

Fremgangsmåte

  • Legg soppen i en bolle og hell over kokende vann så det dekker soppen. Sett til side.
  • Skjær løk, gulrøtter, stangselleri og squash i små terninger. Riv evt grovt på rivjern.
  • Varm litt olje i en gryte og fres løk, gulrøtter og stangselleri i 5-10 minutter på middels varme. Jo lengre desto bedre, men det var det med tålmodigheten.
  • Ta soppen opp av bløtevannet (OG TA VARE PÅ VANNET) og grovhakk.
  • Tilsett sopp, finhakket hvitløk og squash i gryten og fres videre i ca. 5 minutter.
  • Ha oppi tomatpuréen og stek i ett minutt til.
  • Hell oppi tomatene og linsene, og la alt koke i 25-30 minutter til grønnsakene og linsene har blitt helt myke.
  • Lag sausen ved å smelte smør og røre inn melet. Spe med melken, tilsett salt og muskat og la det koke i 5 minutter. Rør underveis så det ikke brenner seg fast i bunnen. Ta av varmen og rør inn halvparten av osten.
  • Sett sammen lasagnen ved å legge plater, ostesaus og plater lagvis. Begynn med et lag ostesaus, så plater, deretter grønnsakssaus og fortsett til det ikke er mer igjen . Avslutt med plater og ostesaus på toppen. Dryss resten av osten over til slutt. Jeg brukte 5 lag med lasagneplater inkludert topp og bunn.
  • Stek lasagnen i ovnen på 200 grader i 30-35 minutter.

La gjerne lasagnen stå i 10-15 minutter for å sette seg før servering. Server med en frisk salat ved siden av. Vel bekomme.
