Dersom du har vært på restaurant i Italia, har du kanskje ved en eller flere anledninger bestilt poteter ved siden av hovedretten. Og da er sannsynligheten stor for at du har fått servert noen gyllene, sprø potetbiter kalt patate al forno – eller ganske enkelt; poteter fra ovnen. Og hvis disse potetene er laget med omtanke og kjærlighet, er de rett og slett i en helt egen klasse. De er knasende sprø på utsiden og myke inni.

Det er verken vanskelig, tidkrevende eller spesielt komplisert å lage patate al forno. Hemmeligheten bak de gyllene, sprø potetbitene er et lite triks. Følger du det er du nesten garantert suksess. Og trikset? Det er såre enkelt. Potetene kokes i 7-8 minutter først, før vannet helles av og de får dampe seg litt tørre. Legg på lokk på gryten og rist kraftig. Det som skjer da, er at det ytterste laget som har blitt kokt, går litt i oppløsning. Potetene blir rett og slett litt lodne på utsiden. Dette gjør at det blir mer overflate på potetbitene og dermed mer potet som kan bli sprøstekt. Etter denne behandlingen legges potetbitene i en ildfast form og stekes i ovnen med varmluft til de er ferdige.

Disse potetene er så populære hjemme hos oss at når jeg lager dem, må jeg alltid beregne mer poteter enn jeg gjør i andre sammenhenger, for det blir alltid spist opp. Om du er en purist som meg som spiser potetbitene som de er, eller velger å dyppe dem i ketchup først som Tuppen og Lillemor foretrekker – ja det er jo helt og holdent opp til deg.

Du kan for eksempel servere dem til andebryst med appelsinsaus.

Ingredienser

  • 1 kg kokefaste poteter
  • salt
  • olivenolje

Fremgangsmåte

  • Forvarm oven til 200 grader varmluft (eller 220 grader over- og undervarme)
  • Skrell potetene og del dem i biter. En middels stor potet kan deles i 4 biter og en stor i 8 biter.
  • Kok potetene i lettsaltet vann i 5-8 minutter.
  • Hell av kokevannet og la potetene dampe litt av seg i gryten.
  • Legg på lokk og rist potetene godt. De skal bli litt "lodne".
  • Legg potetbitene over i en ildfast form og ringle over litt olje og dryss med salt.
  • Bak potetene i ca. 30 min, til de blir gylne og sprø.

Server straks ved siden av kjøtt eller fiskemiddagen.
