Dette er nok en italiensk-inspirert klassiker her på bloggen. Trolig er den funnet opp på den andre siden av dammen, men det gjør ingen ting for kylling med sitron og kapers, eller pollo piccata som retten også kalles er skikkelig god. Jeg synes det er en ordentlig sommerrett med frisk smak av sitron og salt fra kapersen sammen med mørt kyllingkjøtt. I tillegg til å serveres med en sitronsaus vendes kyllingen i en melblanding med salt, pepper og revet sitronskall som gir enda et lag av sitron til retten.

Selv om denne retten altså nok skal være funnet opp av italienske emigranter i USA, så ser jeg lett for meg at jeg kan sitte på en piazza et eller annet sted i Italia ved lunchtid å spise dette. Da skulle jeg hatt et glass hvitvin ved siden av og sittet og nytt solen, og folkelivet rundt meg. Jeg ville sett på folk pent kledd opp på vei til eller fra et møte eller lunsjavtale, og bestemødre som passer barnebarn, og kanskje noen forelskede par som slentrer forbi hånd i hånd. En parasoll gir skygge for solen og en lett bris stryker forbi. Ja, ja, kanskje til høsten. Foreløpig er det vel best å holde seg til Norgesferie.

Men det er jo det som er så fint med å lage mat fra andre land. Man kan i hvert fall drømme seg litt bort en liten stund. Smaker og lukter er perfekte måter å vekke minner og lokke frem assosiasjoner, og denne retten med kylling med sitron og kapers er som skapt for det. Prøv å lage denne en dag, og spis den gjerne ute om du har mulighet. Vel bekomme.

Ingredienser

  • 600 gr kyllingfilet
  • 1 dl hvetemel
  • 2 ts salt
  • nykvernet pepper
  • smør/olje til steking
  • 1 sitron, 2 ss saft og skall revet fint
  • 1/2 dl hvitvin
  • 1 1/2 dl kyllingkraft
  • 1 ss romtemperert smør
  • 2 ss kapers (eller mer om du vil)
  • 1/2 potte persille, finhakket

Fremgangsmåte

  • Skjær kyllingfiletene i to på langs slik at du får tynne skiver.
  • Bland hvetemel, salt, pepper og halvparten sitronskallet og vend kyllingskivene i blandingen.
  • Rør sammen 1 ss smør og 1 ss hvetemelblandingen som du har vendt kyllingfiletene i og resten av sitronskallet.
  • Varm opp rikelig olje og smør i en stekepanne og stek filetene i 2-3 min pr. side. Hold filetene varme.
  • Lag sausen i den samme stekepannen uten å skylle den ut. Tilsett hvitvinen, sitronsaft og kyllingkraften.
  • Rør inn smør/melblandingen og la sausen koke til den tykner.
  • Hell sausen over kyllingfiletene og dryss over kapers og finhakket persille.

Server straks med poteter og grønnaker. Vel bekomme.
