Jeg er så heldig å være del av et :U-støttet initiativ som har som formål å fremme forbruket av europeisk frukt og grønt. Min rolle her er å lage mat og dele oppskrifter med frukt og grønt. Hver måned vil jeg motta en «mystery box» med sesongens grønnsaker og frukt, og basert på den skal jeg lage noe med disse råvarene. Du kan lese mer om initiativet på ilovefruitandvegfromeurope.com. I første boks var det cherrytomater, vårløk, bredbladet persille, hermetisk grillet paprika, juice av kaktusblomst og organisk bjørnebærsyltetøy. Det to siste kommer jeg tilbake til. Grønnsakene har jeg brukt til å lage en skikkelig deilig paella.

Paella er en nydelig rett basert på safranris med masse smak fra alle de deilige råvarene som har fått koke med. Det finnes vel omtrent like mange oppskrifter på paella som det finnes kokker, og det er ikke så rart. Angivelig stammer retten fra traktene rundt Valencia der fattige bønder og landarbeider som kokte risen og hadde oppi det de fikk tak i. Det var ofte tomater, løk, bønner og hva man måtte finne av andre ting som segler, kanin, and eller kanskje kylling. Det var altså ingen sjømat i paella til å begynne med. Men fordi dette er en svært fleksibel rett har det selvsagt utviklet seg utrolig mange varianter – helt fra rent vegetariske til sjømatvarianter, de med bare kjøtt og de som inneholder litt av alt. Paella er forresten navnet på den store flatbunnede pannen som brukes, og som altså har gitt navnet til retten. Det går imidlertid fint an å bruke en stor stekepanne også.

I denne herlige varianten av paella er det både kjøtt og sjømat i tillegg til grønnsaker. Jeg har brukt chorizo, kylling, blåskjell og reker, men her er det som sagt store muligheter til å bruke det du liker og får tak i. Vil du pimpe den opp enda mer, kan jo sjøkreps, hummer, kamskjell, hjerteskjell eller krabbe tilsettes. Bare pass på steketiden slik at ikke de forskjellige råvarene blir tørre. Alt skal jo være ferdig samtidig, så de må tilsettes på forskjellige tidspunkter.

Så altså, denne i utgangspunktet ydmyke hverdagsretten kan faktisk fortsatt være det, en hverdagsrett, men det kan også i høyeste grad være selskapsmat. Det er innholdet som bestemmer hvor fin paellaen skal være. Om sommeren går det for eksempel fint an å ta med seg tingene ut på stranden, lage et bål og tilberede paellaen der. Da kan du jo for eksempel samle sammen ting du finner i vannkanten som strandsnegler, små krabber og blåskjell og bruke det.

Ingredienser

  • 400 gr lårfilet av kylling
  • 100 gr rå chorizo
  • olivenolje til steking
  • 1 løk
  • 2 fedd hvitløk
  • 1 pakke cherrytomater
  • 2 bakte paprikaer (gjerne hermetiske)
  • 1 ts paprikapulver
  • salt og pepper
  • 4 dl paella eller risottoris
  • 6 dl fiskekraft (eller utblandet fiskebuljong)
  • 2 dl hvitvin
  • 0,5 gr safran
  • 16 blåskjell
  • 500 gr reker
  • 2 vårløk
  • 1 liten bunt bredbladet persille
  • 1 sitron til servering

Fremgangsmåte

  • Begynn med å gjøre alt klart; finhakk løk og hvitløk og skjær paprikaene i småbiter. Del tomatene i 4 eller 8 avhengig av størrelse. Pill rekene med unntak av 8 stk. Skjær kyllingen i litt store biter og chorizoen i småbiter. Sett til side.
  • Damp blåskjellene i litt vann til de åpner seg, ca. 3 min. Sett til side.
  • Varm opp buljong og vin og rør ut safranen.
  • Varm litt olje i en paellapanne eller en stor stekepanne. Stek chorizobitene til de slipper fettet og blir sprø. Ta dem ut av pannen og stek kyllingbitene til de får litt farge. Ta dem ut av pannen og sett til side.
  • Behold fettet i pannen og blank løk og hvitløk til det blir mykt og faller litt sammen. Tilsett tomatene og paprikabitene. La det surre 2-3 minutter til tomatene også blir myke.
  • Tilsett risen og la den surre med til den er dekket av olje. Legg kyllingen og chorizoen tilbake oppi gryten og hell over den varme buljongen og kraften fra blåskjellene. Rist pannen et par ganger frem og tilbake slik at risen fordeler seg jevnt utover. Fra nå av skal det ikke røres i pannen.
  • La paellaen trekke i 15 minutter uten lokk.
  • Ta de pillede rekene og dytt dem nedi paellaen. Legg resten av rekene og blåskjellene oppå risen og legg på et lokk slik at alt blir varmt.
  • Paellaen er ferdig nå all væsken er absorbert.

Dryss over vårløk og finhakket persille og pynt med sitronbåter og server straks. Gjerne med godt brød ved siden av - og kanskje et glass kald hvitvin også. Vel bekomme.

Tips

Dette er en svært fleksibel rett. Bruk det du har eller får tak i av sjømat. Vil du luxe det til kan du legge til sjøkreps, hummer eller kamskjell. Mange serverer med erter drysset over. Vil du ikke ha kjøtt i det hele tatt dropper du bare chorizo og kylling, eller du er kanskje ikke så glad i sjømat og vil heller ha en kjøttversjon - vær så god.
