Sjømat og sommer går hånd i hånd og blåskjell er en favoritt for mange. Det er enkel, billig og veldig god mat og noen ganger også selvfanget. Som regel dampes de og spises som de er eller med pommes frittes ved siden av. Ikke et vondt ord om denne måten å spise blåskjell på. Jeg gjør det selv flere ganger i løpet av sommeren. Men av og til er det greit med litt variasjon, og da kan marinerte blåskjell være et godt alternativ.

Denne oppskriften på marinerte blåskjell har jeg fra en liten kokebok (100 tapas with Tio Pepe) jeg plukket opp en gang for mange år siden, da Husbond og jeg var på vinsmaking hos en  spansk sherryprodusent- 100 tapas with Tio Pepe. Dette er altså i utgangspunktet en tapasrett, og passer dermed selvsagt ypperlig på et tapasbord med masse andre småretter. Men retten kan også fint fungere som forrett til 4 eller hovedrett til 2 personer.  Blåskjellene som i seg selv er litt søtlige i smak kler utrolig godt følge av den syrlige sherryeddiken og de friske grønnsakene.

Har du ikke sherryeddik, kan du selvsagt bruke annen eddik som for eksempel rødvinseddik. Men sherryeddiken har en helt særegen smak og er verdt å anskaffe. Den har en særegen smak og kan brukes i mange dressinger og marinader.

Ingredienser

  • 1 kg blåskjell
  • 2 dl hvitvin/øl/vann + 1 ts hvitvinseddik
  • 1 løk
  • 2 fedd hvitløk
  • 2 tomater
  • 1 grønn paprika
  • 4 ss olivenolje + litt til steking
  • 1 ss sherryeddik
  • salt og pepper

Fremgangsmåte

  • Finhakk løk og hvitløk og skjær tomat og paprika i små terninger.
  • Bland halvparten av løken, tomat- og paprikabitene og rør inn olivenolje og sherryeddik. Smak til med salt og pepper og sett dressingen til side.
  • Rens blåskjellene. Kast skjell som er knust eller ikke lukker seg.
  • Varm litt olivenolje i en gryte og fres hvitløk og halvparten av løken til det er mykt og blankt.
  • Legg blåskjellene i gryten sammen med vinen og legg på lokk. La skjellene dampe til de har åpnet seg (ca. 5 min).
  • Ta blåskjellene av varmen og la dem avkjøles litt. Del skjellene i to og legg hver innmaten oppi et skjell  og dander på et fat.
  • Fordel dressingen over blåskjellene. Retten kan gjerne stå kjølig i en times tid, før servering.

Server med godt brød.

Tips

Ikke hell ut kokekraften fra blåskjellene. Den er kjempegod og kan brukes som base for fiskesuppe eller saus.
