Jeg tror de fleste som tenker på indisk mat ser for seg noe med kylling eller lam, om det ikke er noe vegetarisk da. Men India har en lang kystlinje og for mange er fisk og annen sjømat en stor del av kostholdet. Da jeg bodde i India, bodde jeg hos en indisk familie fra Bengal. De var svært glad i fisk, så det sto ofte på middagsbordet. Som regel var det en ferskvannsfisk som hadde en helt uhyre mengde med små ben, men det er en annen historie. I dag har jeg laget en indisk blåskjellcurry. Den er neppe autentisk, men allikevel smakte den for meg skikkelig indisk.

Utgangspunktet for curryen var et nett med blåskjell og ellers hva jeg hadde i kjøleskapet. Det ble derfor poteter og squash som fikk æren av å holde blåskjellene med selskap. Jeg fant en liten boks med currypaste i kjøkkenskapet. Det finnes mengder av forskjellige slike paster å få kjøpt, så mengden currypaste må du nesten smake deg til underveis, for de forskjellige merkene kan ha veldig forskjellig styrkegrad.

Jeg har et samarbeid med Pipervika på Fisketorget i Oslo. De har et bredt utvalg fisk og en kompetent betjening. Stikk gjerne innom dersom du er i nærheten.

Ingredienser

  • 1 nett blåskjell (1 kg)
  • 1 dl hvitvin (evt. vann + litt sitronsaft)
  • 8 poteter
  • 1 squash
  • 1 stor løk
  • 2 fedd hvitløk
  • 2-3 ss indisk curry paste
  • 1 boks kokosmelk
  • olje til steking
  • koriander
  • ris til 4 personer

Fremgangsmåte

  • Rens blåskjellene godt. Kast de som er ødelagte. Gi de som er åpne et lite kakk. Dersom de ikke lukker seg, så skal disse også kastes.
  • Skjær løk i tynne ringer og finhakk hvitløken. Skjær poteter og squash i terninger.
  • Ta en 1/4 av løken og hvitløken i en gryte og fres med litt olje. Ha oppi blåskjellene og hvitvinen og legg på lokk. La det dampe 3 minutter. Rist på gryten et par ganger. Sjekk om skjellene har åpnet seg. Hvis ikke kok et minutt til. Trekk til side.
  • Fres resten av løken og hvitløken i en gryte på middels varme til løken har blitt blank.
  • Ha oppi currypasten og fres et par minutter til.
  • Hell oppi kokosmelken og kraften fra blåskjellene.
  • Tilsett poteter og squash. La det småkoke til potetene er møre, ca. 15 minutter.
  • Ta blåskjellene ut av skjellene, men la det gjerne være noen igjen til pynt.
  • Når potetene er møre, tilsett blåskjellene og kok ett minutt eller to til skjellene er varme. De trenger ikke å koke mer, de skal bare bli varme.
  • Server straks med rikelig med koriander og ris ved siden av.
