Nylig lagde jeg en red curry med blomkål og kikerter. Det ble en skikkelig god mettende hverdagsrett, som det helt sikkert ikke er siste gang jeg kommer til å lage. Ferdig curry paste fra butikken gir denne retten tonnevis med smak uten særlig innsats. Hvor sterk du vil ha den bestemmer du selv, juster mengden curry paste opp eller ned alt ettersom du ønsker en sterkere eller mildere smak.

Jeg synes ofte at en curry med kokosmelk fort kan bli litt nesten vammel i smaken, men med limejuice og fiskesaus blir smaken straks friskere. Det er i hvert fall mitt triks. Litt sukker kan også være med på å runde og gjøre smaken mer harmonisk.

I min red curry med blomkål og kikerter har jeg også til satt squash og rikelig med spinat, men det går helt fint å tilsette andre grønnsaker også. Pass da bare på å justere koketiden, slik at alt blir ferdig samtidig, så tilsett gjerne i flere omganger.

Ingredienser

  • 1 bomkål
  • 1 pakke kikerter
  • 1 squash
  • 1 pakke spinat
  • 1 løk
  • 2 fedd hvitløk
  • 1 ss revet ingefær
  • 2 ss red curry paste (juster etter smak)
  • 1 boks kokosmelk
  • saften fra 1/2 lime
  • 1 ts fiskesaus (kan sløyfes)
  • rapsolje

Fremgangsmåte

  • Del blomkålen i buketter (munnrette biter)
  • Skjær squashen i biter
  • Hakk løk og hvitløk og riv ingefær.
  • Skyll kikertene.
  • Stek løk og hvitløk til det har blitt blankt.
  • Tilsett currypaste'en og fres et minutt.
  • Hell oppi kokosmelken og tilsett ingefær og alle grønnsakene unntatt spinaten.
  • La det småkoke til blomkålen er mør.
  • Bland inn spinaten rett før servering.
  • Smak til med limejuice og evt fiskesaus.
