Grønn kylling curry har en vidunderlig smak fra currypasten. Kokosmelken gjør sausen kremet, fiskesaus gir ekstra umami og chilien et mildt (eller kraftig) kikk. Sammen med saftig kylling og sprø grønnsaker er dette rett og slett en fulltreffer på travle dager. Bedre kan det nesten ikke bli.

Da jeg lagde denne curryen, mer eller mindre tømte jeg grønnsakskuffen for grønne og hvite grønnsaker. Her er det brokkoli, blomkål, aspargesbønner, squash, vårløk og litt sopp. Men du kan i grunnen bruk nesten hva du vil av grønnsaker, det meste blir godt. Så her er det bare smak og fantasi som setter grenser. Mitt eneste råd er at bruk mye grønnsaker, da blir det ekstra godt.

Ikke la deg skremme av at ingredienslisten er lang. Som sagt tømte jeg praktisk talt grønnsakskuffen når jeg lagde denne, men færre grønnsaker ville også gått bra. Og alle ingrediensene er det mulig å få tak i på super’n.

Jeg serverte min grønn curry med kylling sammen med risnudler, men kokt ris går også fint.

Ingredienser

  • 2 fedd hvitløk
  • 1 tommel frisk ingefær
  • 1 grønn chili (valgfritt)
  • olje til steking
  • 2 ss grønn curry paste
  • 1 boks kokosmelk (ikke lett)
  • 1 ss fiskesaus
  • 2 ts sukker
  • 2 dl kyllingbuljong
  • 1 brokkolibukett
  • 1 lite blomkålhode
  • 100 gr aspargesbønner
  • 1/2 squash
  • 10 shitakesopp (eller aromasopp)
  • 4 vårløk
  • 600 gr kyllingfilet

Fremgangsmåte

  • Finhakk hvitløk og ingefær og fres det i middels varm olje i en gryte/panne som er stor nok til å romme alt i et minutt.
  • Tilsett currypasten og fortsett å steke i ett minutt til.
  • Ha oppi kokosmelken og  hønsebuljongen.
  • Smak sausen til med fiskesaus, sukker og evt. mer chili eller currypaste om du ønsker det.
  • La det småkoke mens du skjærer opp grønnsakene og kyllingen i munnrette biter.
  • Ha alle grønnsakene  unnatt vårløken oppi sausen og la det koke med 3-4 minutter minutter.
  • Tilsett kyllingen og la det trekke til kyllingen er ferdig (ca. 5 minutter).
  • Rør inn vårløken.

Server rykende varm med ris eller risnudler ved siden av.
