Stekt makrell thai style er en herlig frisk vri på stekt makrell. De stekte filtene marineres i en saus som er både syrlig, sterk, salt og søt på en gang. Det passer utrolig godt til den fete fisken. Syren fra lime skjærer rett gjennom den fete makrellen og og letter opp hele retten. Det er enkel tilberedelse som gir fisken er helt annen smaksprofil enn man er vant til.

Sausen kalles nuoc cham og finnes på alle restaurantbord i Thailand og Vietnam. Den dryppes rett og slett over retten for å krydre maten, litt som vi bruker salt og pepper her. Den passer liksom til alt. Vel, den passer i hvert fall godt til mye og er en enkel måte å gjøre et stekt, kokt, grillet kjøttstykke eller fisk litt mer spennende.

Det er nok mange som tenker på makrell som den ultimative sommermaten.  Men faktum er at makrell smaker godt hele året, og det er fint mulig å få kjøpt frossen makrell som passer godt å bruke til denne retten. For mange er nok makrell som  middagsmat synonymt med stekt makrell surret i rømmesaus, og det er nærmest utenkelig at man kan gjøre noe annet med fisken enn å servere på den måten. Sånn tenkte i hvert fall jeg lenge. Men denne enkle oppskriften på stekt makrell thai style viser tydelig at det er mange måter man kan tilberede makrellen på

Ingredienser

  • 6-8 makrellfileter
  • 2 ss hvetemel
  • 2 ts salt
  • Nøytral olje til steking
  • 2 ss limesaf
  • 3 ss vann
  • 2 ss fiskesaus
  • 2 ts sukker
  • 1 liten thaichili
  • 1 fedd hvitløk

Fremgangsmåte

  • Bland mel og salt og vend filetene i melblandingen.
  • Bland limesaft, vann, fiskesaus, sukker og rør til sukkeret er helt løst opp. Skjær chilien og hvitløken i tynne skiver og ha oppi dressingen.
  • Varm olje i en stekepanne og stek filetene først med skinnsiden ned til skinnet er sprøtt. Vend fisken rundt og stek til den er gjennsomstekt.
  • Legg de stekte filtene på et fat og hell over sausen.

Server med kokt ris og grønnsaker. Prøv gjerne gulrot og squashsalat.

Tips

Thai chili er veldig sterk. Dersom du ikke liker sterk mat, bruk en annen type chili som er mildere og tilsett heller for lite chili enn for mye.
