Denne salaten er veldig enkel å lage og smaker veldig godt. Det tar riktignok litt tid å skjære opp grønnsakene i tynne strimler, men jeg synes det er verdt å ta seg den tiden det tar. Blir grønnsaksstavene for tykke blir ikke salaten særlig raffinert, og skulle du velge å bruke rivjernet i stedet for kniven blir det fort en grøtete affære. Salaten passer ypperlig ved siden av grillet kjøtt eller fisk.

Det står én rød thai chili i oppskriften. Disse er kjempesterke og vil gi en meget hot salat. Er du ikke så glad i supersterk mat, anbefaler jeg å bruke en annen type chili. Salaten blir kjempegod allikevel. I thailandsk mat er det viktig å balansere alle smakene. Dressingen er ment å være syrlig og sterk. Fiskesausen bringer umami til dressingen og sukkeret balanserer alle smakene. Smak på dressingen når den er ferdig blandet. Juster evt. smaken dersom du ikke synes den treffer helt.

Ingredienser

  • 2 gulrøtter
  • 1 squash
  • 1,5 lime, saften
  • 2 ss fiskesaus
  • 1 ss nøytral olje, f.eks. raps
  • 2 ts brunt sukker
  • 1 fedd hvitløk
  • 1 rød thai chili
  • 1 håndfull grovt hakket peanøtter
  • 0,5 dl hakket koriander
  • 0,5 dl hakket mynte

Fremgangsmåte

  • Skjær gulrøtter og squash i fyrstikktynne strimler, og grovhakk peanøttene.
  • Bland saften fra limene, fiskesausen, oljen og sukker. Finhakk hvitløk og chili og ha oppi dressingen.
  • Hell dressingen over grønnsakene, urtene og peanøttene og bland godt.

Tips

Dersom du ønsker å lage denne salaten på forhånd, kan du gjøre alt klart men vente med å blande inn dressingen. Den vil nemlig gjøre grønnsakene slappe om salaten blir stående for lenge.
