Hvis mat med skikkelig trøkk i er din greie, da synes jeg du skal prøve denne salaten. Nudelsalat med laks er en herlig frisk middagssalat med saftig laks, nudler og sprø grønnsake, og denne leverer definitivt på smak samtidig som den er ganske kjapp å lage. Og det, er i hvert fall min oppskrift på suksess i hverdagen – god smak og kort tid, altså.

I denne salaten steker jeg laksen under grillen. Da går det fort, men prisen er at jeg må passe på som en smed. Et par minutter for lenge under grillen og fisken er brent på utsiden og tørr og kjedelig inni. Men, passer du tiden får du laks som  er veldig saftig og samtidig har litt stekeskorpe utenpå. Marinaden, eller sausen om du vil, som smøres på fisken midtveis i stekingen gir en herlig krydret, frisk og umamirik smaksvri på laksen.

I min nudelsalat med laks har jeg brukt agurk og gulrøtter, men her kan du selvsagt variere med de grønnsakene du liker. Men det er godt at de er litt sprø, for både laksen og nudlene er jo ganske myke i konsistensen. Det vil sikkert være godt om du slenger med litt nøtter også. Men det er dressingen som gjør denne salaten til noe spesielt. Som mye annen mat fra Syd-Østasia er den bygd opp på prinsippet om at det skal være noe surt, noe søtt, litt umami, litt (eller mye) hot og noe friskt. Til sammen gir det et spennende smaksbilde og kan være en kjærkommen avveksling fra all den kraftige kosten vi normalt spiser i desember.

Ingredienser

  • 2 ss ingefær, fint revet
  • 2 hvitløksfedd, finhakket
  • 2 lime, fint revet skall og juice
  • 1 rød chili, finhakket
  • 2 ss brunt sukker
  • 2 ss fiskesaus
  • 200 gr risnudler
  • 2 ss sesamfrøolje
  • 500 gr laksefilet
  • salt og pepper
  • 2 store gulrøtter
  • 1 agurk
  • 1 neve korianderblader
  • 1 neve mynteblader

Fremgangsmåte

  • Forvarm ovnen med grill til 220 grader.
  • Bland ingefær, hvitløk, chili, sukker, limejuice og skall, sukker og fiskesaus til en dressing. Rør til sukkeret er løst opp og sett til side.
  • Kok risnudlene som angitt på pakken. Hell av vannet og rør inn sesamfrøoljen for å unngå at nudlene klistrer seg sammen.
  • Skjær gulrøtter og agurk i strimler. og hakk urtene grovt.
  • Legg laksen på et bakepapir på en stekeplate og krydre godt med salt og pepper.
  • Sett laksen høyt inni ovnen og la den stå i 4 minutter.
  • Ta laksen ut og hell over halvparten av dressingen over laksen og sett inn i ovnen igjen.
  • Bak laksen i ytterligere 3-4 minutter. Er fileten veldig tykk trenger den kanskje litt  lengre tid for å bli ferdig. Men ikke la den stå inne er enn max 5 min. Dette går fort.
  • Dander grønnsaker, nudler og urter på et fat og bland inn resten av dressingen.
  • Del laksen i mindre biter og legg på toppen.

Tips

Du kan selvsagt bruke andre grønnsaker om du vil det, men jeg synes at litt av det som gjør denne salaten så god er at grønnsakene er skikkelig krønsjy. Litt hakkede nøtter på toppen er sikkert også godt.
