På denne tiden av året får jeg alltid så lyst på mat som er grønn og frisk. Alt som kommer opp av jorden frister meg. Og brennesle er en av de tingene som titter opp fra jorden ganske tidlig og den kan brukes til så mangt.  Den denne gangen har jeg laget en lakseform med brennesle. Dette er en god og enkel hverdagsmiddag som lages i en form.

Brennesle finnes over hele landet, og det er ingen som blir sure om man går amok og plukker grøftekanten tom. Den er gratis og enkel å få tak i. Sånn i motsetning til ramsløk og enkelte andre populære urter/grønnsaker i naturen. Den har som sagt et stort bruksområde. Her har jeg samlet mine 5 beste oppskrifter med brennesle. 

Plukk bare de nye skuddene og husk å utstyre deg med gummihansker når du er på jakt, for den brenner godt og lenge på huden. Når du kommer hjem, skyller du neesleskudden godt i kaldt vann for å bli kvitt jord, støv og evt. gullregn fra huder o.l. Deretter forvelles brenneslen i kokende vann i 20-30 sekunder. Hell av vannet og avkjøl neslen i kaldt vann. Ta den opp og klem ut så mye væske som du klarer og neslen er klar til bruk. Du kan godt plukke mye når du er i gang og gjøre klart til dette punktet. Det du ikke skal bruke med en gang kan du fryse ned i passelige porsjoner til senere bruk.

Brennesle har en forbausende mild smak og passer ypperlig til laksen. Får du ikke tak brennesle kan du også bruke spinat på samme måte. Men jeg anbefaler deg å i det minste prøve å lage lakseform med brennelse i hvert fall en gang.

Ingredienser

  • 600 gr laksefilet
  • salt og pepper
  • 3 dl matfløte
  • 3 ss creme fraiche
  • 1 ss dijonsennep
  • 1 ts hvitløkspulver
  • 1 l brennesle

Fremgangsmåte

  • Sett stekeovnen på 170 grader.
  • Forvell brenneslen, klem ut så mye vann som mulig og finhakk. Sett til side.
  • Skjær laksefileten i porsjonsstykker, salte og pepre og legg dem i en ildfast form.
  • Bland sammen fløte, creme fraiche, sennep, hvitløkspulver og finhakket brennesle og hell over fisken.
  • Bak i ca. 10 minutter, eller til fisken er ferdig stekt og flaker seg når du trykker lett på den med en gaffel.

Server med kokte poteter og agurksalat ved siden av.
