MAI – Naturen er endelig full av ting vi kan spise, og en av disse tingene er nesler, eller brennelse. Jeg regner med at alle har et eller mange barndomsminner som inneholder ublide møter med denne planten. Det gjør sikkert sitt til at de fleste møter den med en viss skepsis, og det er jo forståelig. Men utstyrer du deg med gode gummihansker (av typen oppvask) har du ingenting å frykte. Behold hanskene på til brenneslen er vasket og kokt i 3 minutter. Da er de avvæpnet og har blitt til en aldeles nydelig, mild grønnsak. Skulle du ikke få tak i brennesle, eller fortsatt synes det høres skummelt ut, kan du bytte ut brennesle med spinat. Smaken er litt forskjellig, men det fungerer helt utmerket. Jeg vil tippe at de fleste som har prøvd seg på matlaging med brennesle har laget suppe. Det er imidlertid masse annet man kan bruke brennesle til og her får du altså mine 5 beste oppskrifter med brennesle som ikke er suppe.

Denne risottoen er en skikkelig show-stopper med sitt knallgrønne utseende. Men selv om utseende er hissig, er smaken mild og fin. Bruk den som en forrett eller som tilbehør til for eksempel et stykke fisk. Nydelig begge deler.

Omelett er deilig og lettvint. Nesten alt kan puttes i en omelett. Denne inneholder masse brennesle og litt laks.

Disse ravioliene har et nydelig fyll av ricotta, parmesan og selvfølgelig brennesle. Servert slik som her, med brunet smør med salvie er det en av mine favoritter på denne tiden av året.

En pai smaker alltid godt, og er alltid populært. La denne velsmakende paien og ta den med på picknick. Sammen med litt vin, en frisk salat og godt selskap er dette en garantert hit.

Lasagne med grønne plater

Denne lasagnen ser kanskje uskyldig ut utenpå, men inni skjuler den deilig grønne pastaplater som har fått sin farge fra brennesle og en annen populær urt nemlig ramsløk.

Dette var altså mine 5 beste oppskrifter med brennesle. Jeg håper du tar sjansen på å prøve en av dem, for de smaker mildt og fint så snart du får varmebehandlet dem.

 

Fun fact om brennesle

Det sies at brennesle skal hjelpe mot revmatisme ved å piske seg med frisk brennesle på leddet. Jeg vet ikke, men skjønner i hvert fall at man får en ny smerte som kanskje tar oppmerksomheten bort fra de revmatiske plagene for en stund. Brennelse skal i det hele tatt være godt for veldig mye i følge gammel folkemedisin. Kjekt å vite at den nesten kan kurere alt.

Det skal visst også være mulig å tørke brenneslen til te, eller knuse den til et pulver. Da skal også brenneffekten forsvinne, men det har jeg ikke prøvd.
