I hagen min, langs gjerdet vokser det alltid mye brennesle. Den er både stygg og lei å komme borti, og når jeg utpå sommeren må fjerne den, er det nødvendig med gummihansker og tykk jakke for å komme den til livs. Derfor har jeg valgt en annen strategi i år. Dersom jeg spiser de unge skuddene nå på våren, vil det kanskje ikke bli så mye utpå sommeren? Når brennesle i tillegg smaker godt, er det jo ingen grunn til å la være. De brenneslene som ikke unngikk mine oppmerkesomme fingre, ble sammen med litt bacon i kjøleskapet til en deilig neslepai med bacon.

Så utstyrt med gummihansker gikk jeg løs på de friske brennesle skuddene med stor iver. De var temmelig små, så det tok sin tid, men det gikk greit. Inne på kjøkkenet igjen, måtte brenneffekten nøytraliseres.  Så etter skikkelig vask i kaldt vann ble neslene forvellet. Dermed ble neslene forvandlet fra brennede ugress til deilig råvare.

Noe av det jeg liker godt med pai, er at man kan raske sammen det man har i kjøleskapet og skuffer og få et herlig måltid ut av «ingenting». Til denne paien fant jeg altså neslene i hagen, litt bacon i kjøleskapet, en purre i kjøleskapet sammen med noen egg, litt fløte og melk. Voila; neslepai med bacon var et faktum. Og så godt da. Neslene har en mild smak, men har du ikke nesler kan du også godt bruke spinat – godt det også. Har du ikke bacon, det gjør heller ikke noe. En kjøttfri lunsj eller middag har jo aldri skadet noen, eller du kan bruke noe annet kjøttpålegg i stedet.

Ingredienser

  • 0,6 dl olivenolje
  • 0,6 dl kaldt vann
  • 260 gr. hvetemel
  • 1 ts salt
  • 2 ss tørket oregano
  • 1 stort egg
  • --
  • 1 l brennesle
  • 1 purre
  • litt olje til steking
  • 200 gr bacon i tern
  • 1 dl kremfløte
  • 1 dl helmelk
  • 3 egg
  • 1/2 ts salt
  • nykvernet pepper
  • 100 gr revet Norwegia

Fremgangsmåte

  • Ha mel og salt i en bolle.
  • Tilsett olivenolje, egg og vann og bland godt
  • Hell deigen ut på en arbeidsflate og arbeid deigen godt sammen.
  • Smør en paiform med olje.
  • Rull deigen ut til den er stor nok til å dekke hele formen.
  • Forvarm ovnen til 160 grader
  • Sett formen i kjøleskapet i minst 30 minutter og forstek den deretteri 30 minutter.
  • Mens paiskallet steker; rens neslene og skyll dem godt i kaldt vann og fjern grove stilker.
  • Kok opp rikelig med vann og kok neslene i 1 min i fosskokende vann.
  • Hell av vannet og legg neslene direkte over i iskaldt vann.
  • Ta dem opp av vannet og klem ut overføldig væske. Grov hakk neslene.
  • Rens purren og skjær den i ringer. Fres purre i litt olje til den blir myk og faller litt sammen.
  • Stek baconet sprøtt.
  • Pisk sammen egg, fløte og melk og bland inn salt og pepper.
  • Etter 30 min, ta ut paiskallet og øk temperaturen i oven til 200 grader.
  • Fordel neslene, purre og bacon i paiskallet og hell over eggeblandingen, og dryss over osten.
  • Stek ferdig i ca. 25-30 min.

Server varm, gjerne med en blandet salat ved siden av. Vel bekomme.
