Hva er vel bedre enn en skål rykende varm suppe når dageen begynner å bli litt kaldere? Ikke mye som jeg kan komme på i hvert fall. Ministrone er en italiensk grønnsakssuppe som er proppfull av sesongens gode rotgrønnsaker og mere til. Nå er det masse deilige, norske rotgrønnsaker å få tak i i butikken, og det utnyttes maksimalt i denne oppskriften på minestrone.

Minsetrone er vel en av de mest kjente italienske suppene som finnes, men det morsomme er at det ikke finnes noen absolutt oppskrift, for dette er en man-tager-hva-man-haver-suppe. Vanligvis lages minestrone av rotgrønnsaker, kanskje noen bladgrønnsaker og ris eller pasta. Her har jeg i stedet brukt bønner, noe jeg synes at gjør suppen mer mettende. Men som du kanskje skjønner er det stort rom for improvisasjon her. Bruk det du har og det du liker. Du kan også fint tilsette litt stekt bacon eller pølsebiter, men da blir den ikke vegetarisk, da, om det skulle ha noe å si.

Ekstra stas er det selvfølgelig å servere suppen med litt godt hjembakt brød ved siden av. På bildet er det deilige grissini med salt og rosmarin. Har du liten tid, kan du jo forberede en eltefri focaccia med soltørkede tomater. Har du ikke tid til å bake i det hele tatt, kan du jo slenge noen ostesmørbrød inn i ovnen mens suppen koker, eller kanskje ta noen rundstykker opp av ovnen.

Ingredienser

  • 2 l grønnsaksbuljong
  • 2 gulrøtter
  • 1 pakke borlottibønner (ca. 400 gr.)
  • 1/2 bukett brokkoli
  • 1/4 sellerirot
  • 1 pasternakk
  • 4 poteter
  • 1 purre
  • 1 boks hele hermetiske tomater

Fremgangsmåte

  • Mens buljongen koker opp, skjær gulrøtter, sellerirot, pastinakk og poteter i små terninger og del brokkolien i små buketter. Rens purren godt og skjær den også i smått.
  • Ha gulrøtter, sellerirot, pastinakk og poteter i den kokende buljongen kok i ca. 15 min. Da skal grønnsakene være nesten ferdige.
  • Mens grønnsakene koker, skyll bønnene godt og la tomatene renne av.
  • Tilsett bønner, purre og tomatene og la det småkoke til alt er varmt og grønnsakene er helt møre.

Server straks, gjerne med litt revet parmesan og finhakkede urter på toppen og godt brød ved siden av.

Tips

Får du ikke tak i borlottibønner, kan du bruke kidney bønner, små hvite bønner eller kikerter i stedet. Eller rett og slett bytte bønnen ut med småpasta eller ris.
