Hjemme hos oss blir det skikkelig fest når focacciaen kommer på bordet. Vanligvis lager jeg focaccia på den tradisjonelle måten, men det tar tid, og i hverdagen har jeg som regel ikke så mye av det. Jeg bestemte meg derfor for å prøve en eltefri variant som jeg fant på bloggen til dronningen av eltefritt Ina med Mat på bordet som følge til grønnsaksuppen jeg skulle servere. Jeg rørte sammen deigen kvelden før, og da var det bare å helle den over i formen, etterheve og steke mens jeg lagde suppen. Brødet ble virkelig godt, men som med vanlig focaccia gjelder det å ikke spare på oljen. Da blir brødet tørt og kjedelig.

Som regel lager jeg focaccia med rosmarin og salt, men i dag var jeg i det eksperimentelle hjørnet og toppet brødet med små herlige soltørkede cherrytomater. I tillegg brukte jeg litt av oljen som de hadde ligget i til å helle over brødet sammen med vanlig olivenolje. Dersom du ikke har cherrytomater, går det helt fint med vanlige soltørkede tomater som bare hakkes i litt grove biter.

Ingredienser

  • 500 gr hvetemel
  • 1/4 ts tørrgjær
  • 1 1/2 ts salt
  • 4 dl vann
  • --
  • 15-20 soltørkede cherry tomater
  • God olivenolje
  • Tørket rosmarin
  • Flaksalt

Fremgangsmåte

  • Bland alle de tørre ingrediensene godt og rør inn vannet. Dekk bollen til med plast og la den stå i 12-18 timer.
  • Hell deigen over i en liten langpanne eller annen form den jeg bruker er 20x30 cm.
  • Klem deigen ut slik at den er jevnt tykk.
  • Trykk nedi tomatene og tilsett godt med olivenolje og dryss over litt rosmarin og flaksalt.
  • La deigen etterheve på et lunt sted i min 30. minutter, gjerne litt lengre om du har tid. Deigen skal da ha absorbert det meste av oljen. Sett brødet nederst i ovnen og stek i ca. 25 minutter på 225 grader.
  • Server gjerne med en gang mens det fremdeles er litt varmt.
  • Brødet er best når det er ferskt (det tror jeg i hvert fall, for det ble ikke noe igjen til senere).
