Focaccia er et deilig, italiensk  brød med smak av olivenolje, salt og rosmarin. For meg er det først og fremst et sommerbrød til å nyte på varme sommerkvelder til grillmat, tapas eller bare til et glass god vin, noen solmodne tomater eller oliven og litt skinke. Mer trenger ikke jeg.

Hemmeligheten med en god focaccia er etter min mening olivenolje. Det er ikke her man skal spare på oljen. Det skal mye olje til. For lite olje gir et tørt og kjedelig brød. Vær raus med salt og rosmarin også. Det gir ekstra god smak til brødet.

Dette brødet er imidlertid også ypperlig til koldtbord, noe det er mange av i mai med 17. mai, konfirmasjoner og andre festdager. En porsjon gir et stort brød som kan rekke til mange personer. Aller best er det når det er nybakt, så dette er ikke noe man baker dagen i forveien. Det kan nok fryses ned, men jeg tipper at det ikke blir like godt når det tas opp og tines igjen. Det bør altså bakes den dagen det skal spises, men det er ikke et vanskelig eller tidkrevende brød, så det er ikke umulig å få klemt det inn i et program som kanskje er nokså travelt med alt fra stryking av bunadskjorter, dekking av bord og finpussing av taler.

Denne oppskriften har jeg hentet fra Dag Tjerslands kokebok Italia og bare gjort minimale endringer i oppskriften. Han er Italiaspesialist og oppsskriftene hans gir godt resultat.

Ingredienser

  • 1 kg hvetemel
  • 6 dl vann
  • 1 ss honning
  • 50 gr gjær
  • 30 gr salt
  • 1 dl olivenolje
  • maldonsalt
  • rosmarin

Fremgangsmåte

  • Varm vannet opp til 37 grader og rør inn gjæren og honningen (om du bruker fast honning).
  • Tilsett honning (om du bruker flytende), salt og hvetemel.
  • Elt alt godt.
  •  La deigen heve på et lunt sted til den har blitt dobbelt så stor.
  • Smør en langpanne med olivenolje og hell deigen ut i langpannen. Trykk den ut slik at den dekker hele formen og trykk dype groper i deigen med fingrene og hell over oljen.
  • La deigen heve en gang til til all oljen er absorbert.
  • Forvarm ovnen til 230 grader.
  • Dryss over godt med maldonsalt. og sett inn i ovnen. Stek i 18 minutter. Når det har gått 9 minutter drysses rosmarinen på.

Avkjøl bredet på en rist. Skjær det i biter og server til tapas, antipasti eller på koldtbord.
