Tomatsalsa er vel selvskreven på bordet dersom man skal lage et mexikansk festmåltid. I hvert fall sto det alltid på bordet sammen med tortilla chips på restauranter da vi var på ferie i Mexico for en del år tilbake. Det var like vanlig der som litt brød med olivenolje er i Sydeuropa. Det var deilig og friskt og en flott start på måltidet.

Her hjemme bruker vi salsa dersom vi en sjelden gang har tortilla chips på fredager i stedet for vanlig potetgull. Men like godt er det som følge til stekt og grillet fisk og fjærkre. Min oppskrift er av den aller enkleste varianten med tomater, løk og koriander. Dersom du har lyst kan du legge til fersk chili eller syltet jalapenños. Chili hender det jeg har oppi dersom det bare er voksne som skal spise. Syltet jalapenños liker jeg ikke, for da synes jeg salsaen mister friskheten sin. Men det er jo selvsagt en smakssak.

Aller best er salasaen om sommeren, når jeg kan lage den av solmodne tomater som smaker mye. Resten av året blir den en litt blass utgave av seg selv, men den smaker nokså godt da også.

Ingredienser

  • 2 tomater
  • 1 liten løk
  • 1/2 liten bunt koriander
  • salt og pepper
  • 2 ts nøytral olje
  • 2 ts hvitvinseddik eller eplesidereddik

Fremgangsmåte

  • Del tomatene i biter og ta ut kjernene.
  • Hakk tomatkjøttet i små terninger.
  • Finhakk løken og korianderen.
  • Bland tomater, løk og koriander.
  • Kvern over rikelig med pepper og salt.
  • Hell på eddik og olje og bland alt godt sammen.
  • Smak på salsaen og juster med mer eddik, salt eller pepper dersom du synes det trengs.
  • Ta heller litt lite til og begynne med og tilsett litt etter hvert til blandingen har blitt slik du liker den.

La gjerne salsaen stå en stund på kjøkkenbenken slik at alle smakene får satt seg.
