Sommer er salattid, og pastasalat er alltid populært. Her har jeg laget en pastasalat med middelhavssmaker. I denne salaten er det friske, sødmefylte tomater, ovnsbakt paprika som blir søt og mild, fløyelsmyk aubergine, salte oliven og selvsagt pasta. Sleng oppi en masse friske urter og en god dressing, og de fleste skulle bli fornøyde.

Dette er kanskje ikke salaten du slenger sammen på 1-2-3, men tid du bruker på selve tilberedningen er ikke så lang. Paprikaene må bakes i ovnen og det tar jo litt tid, men preppetiden er kort. Omtrent det samme er tilfellet for auberginen. Den må ligge med salt en stund, før den skylles og stekes i olje. Men da kan du jo gjøre andre ting mens du venter. D kan for eksempel la humla suse, se på skyfigurer, plukke blomster, eller andre nyttige sommeraktiviteter.

Litt mer om paprikaene. Dersom du ikke vil/orker å bake dem selv, kan du kjøpe ferdige på glass. Jeg synes imidlertid at det smaker så veldig mye bedre om du lager selv. Det er ikke mye arbeid, og når du først er i gang, kan du også lage mange. Oppbevar de du ikke skal bruke i en tett boks i kjøleskapet, gjerne med litt olivenolje. Da holder de seg i omtrent en uke. Du kan også fryse ned paprikaene, eller hermetisere dem ved å legge dem på glass og helle over olivenolje til det dekker helt.

Når det kommer til pastaen har jeg ett viktig råd, eller egentlig to. Bruk rikelig med salt i kokevannet, for det gir bedre smak og ikke kok pastaen for lenge. Den vil trekke til seg dressing, så dersom den er helt gjennomkokt i utgangspunktet, får du vassen og trist pasta.gn e

Ingredienser

  • 200 gr tørr pasta
  • 2 røde paprikaer
  • 1 gul paprika
  • 1 stor aubergine
  • 200 gr små tomater
  • 1 pose GAEA sorter organiske kalamataoliven
  • olivenolje til steking
  • 1 god neve bladpersille
  • 1 god neve basilikum
  • ---
  • 1 fedd hvitløk
  • 1 ss rødvinseddik
  • 3 ss olivenolje
  • sky fra paprikaene
  • salt og pepper

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Skjær paprikaene i to og ta ut kjernehuset.
  • Legg paprikaene i en ildfast form og pensle med litt olivenolje.
  • Stek paprikaene i 35-40 minutter, til de har blitt ganske sorte i skinnet, men pass på at de ikke blir forkullet.
  • Ta paprikaene ut og legg dem i en boks/skål med lokk og la dem ligge der til de har blitt kalde.
  • Ta dem ut og dra av skinnet og skjær i biter. TA VARE PÅ SKYEN I BUNNEN.
  • Del auberginen i litt store biter, legg i et dørslag og dryss godt med salt over.
  • La stå i 10-15 min. Skyll av saltet og tørk bitene i et kjøkkenhåndkle.
  • Stek auberginen i litt olivenolje til den blir helt myk og faller litt sammen.
  • Kok pasta til den er al dente.
  • Skjær tomatene i biter og hakk urtene fint.
  • Bland sammen alle ingrediensene i en bolle.
  • Finhakk hvitløk til dressingen og bland den med skyen fra paprikaene og rødvinseddiken. Pisk inn olivenoljen.
  • Hell dressingen over salaten og bland godt. La gjerne salaten stå en stund før du serverer slik at pastaen kan trekke til seg de gode smakene.

Server som en egne rett, eller som tilbehør til sommerens grillmat.

Tips

Kjøper du ferdifggrillet paprika, kan du bruke litt av oljen de ligger i i dressingen. Men smak på oljen først. Dersom du ikke liker smaken, så dropp det.
