Det er lite som er så godt som en skikkelig digg salat på en fin sommerdag, og her har jeg laget en deilig pastasalat med reker. I denne salaten er det nydelig nykål, solmodne tomater, sprø stangselleri og søt paprika sammen med mettende pasta og reker. Mer sommerlig blir det vel ikke?

I en pastasalat er selvsagt pastaen viktig. Velg en pasta som ikke er for liten og tynn. Bruk gjerne typer som fusilli,  strozzapreti, eller lignende. De gir litt mere å tygge på. Pass dessuten på å ikke koke pastaen for lenge. Da blir den bare bløt og ikke særlig fristende. Jeg koker heller pastaen litt for lite, og så blander jeg den inn i dressingen før resten av ingrediensene. Da får den trukket til seg smak og den blir helt perfekt i konsistensen synes jeg.

Jeg har også valgt å bruke nykål i stedet for salat i denne salaten. Grunnen er at salaten faller fort sammen og blir slapp når den blandes med dressingen. Kålen gjør ikke det, og dermed holder salaten seg frisk mye lengre.  Dermed er dette helt klart en pastasalat som egner seg godt til picnic eller til et koldtbord der den skal stå en stund. Men ikke for det, altså, pastasalat med reker passer like godt til en vanlig lunsj hjemme. Er det helg eller ferie, er det selvsagt nydelig med et glass kald hvitvin ved siden av også.

Ingredienser

  • 1 kg reker
  • 200 gr ukokt pasta
  • 3 stilker stangselleri
  • 3 tomater
  • 2 rød spisspaprikaer
  • 1/4 nykål
  • 1 agurk
  • 1 dl hakket bladpersille
  • ---
  • 1 fedd hvitøk, finhakket
  • 1 ts salt
  • 2 ss rødvinseddik
  • 1 toppet ts dijonsennep
  • 1 dl olivenolje
  • nykvernet pepper
  • 1 rød chilipepper, finhakket (valgfritt)

Fremgangsmåte

  • Pill rekene og sett til side.
  • Kok pastaen etter anvisning på pakken, men pass på å ikke koke for mye - gjerne ett minutt eller to mindre enn angitt.
  • Pisk hvitløk, salt rødvinseddik dijonsennep og nykvernet pepper sammen med olivenoljen og tilsett chilien til slutt.
  • Bland dressingen med den kokte pastaen.
  • Finahkk kålen, skjær tomater, paprika, agurk og stangselleri i små biter. Hakk persillen fint.
  • Bland grønnsakene, pastaen og rekene godt sammen.
  • La gjerne salaten stå noen timer i kjøleskapet før den serveres slik at smakene får satt seg.
