Nå er det trygt å si at sommeren har klort seg fast. Temperaturen er på over 20 grader hver dag og badevannet er heller ikke så verst. På slike sommerdager  er det godt med lat mat – mat med mye smak som ikke krever så mye tid på kjøkkenet og helst ikke bruk av varme. Jeg er erklært suppoman, og hva er vel da mer naturlig enn å lage seg en deilig suppe også på varme sommerdager. En kald avokadosuppe passer ypperlig i så måte. Den er utrolig kjapp å lage, smaker deilig og er svalende.

De rå grønnsakene gir suppen en friskhet samtidig som avokadoene gjør den myk og kremet.  Server den gjerne med små terninger av tomat, løk, paprika eller agurk. Eller forsterk det meksikanske preget ved å tilsette litt chili og toppe med koriander og servere tortillachips ved siden av. En klatt med rømme, eller yoghurt kan også passe godt. Eller kanskje noen reker for å gjøre måltidet litt mer mettende.

Kald avokadosuppe er ypperlig som en enkel lunsjrett, eller som en forrett. Er det en hovedrett passer den til to personer og som forrett til fire.

Ingredienser

  • 1 slangeagurk
  • 2 små avokadoer
  • 1 grønn paprika
  • 1/2 løk
  • 1 stilk stangselleri
  • 1/2 grønn chili (valgfritt)
  • 2 1/2 dl Farris
  • salt
  • saft fra 1 lime

Fremgangsmåte

  • Skrell agurken og  vask og rens paprikaen og stangsellerien. Del avokadoen i to og ta ut fruktkjøttet.
  • Skjær grønnsakene i biter og ha alt i en blender.
  • Tilsett farris'en og kjør alt til en helt jevn suppe.
  • Smak til med saften fra en lime og salt. Dersom du synes suppen blir for tykk kan du tilsette litt mer vann.
  • Sett suppen kaldt en time eller to.

Server gjerne med grønnsaker skåret i små terninger.
