Gazpacho er en spansk kald suppe som vanligvis er basert på tomater, agurk og paprika og er jevnet med brød og smakssatt med eddik. Den suppen jeg har laget, er uten tomater, men inneholder mange andre friske grønnsaker og er lagd på samme måte som vanlig gazpacho. Oppskriften er basert på en oppskrift i Ottolenghi sin kokebok Plenty, men er justert litt etter hva jeg hadde av tilgjengelige ingredienser. Kald suppe er utrolig svalende og deilig å spise i sommervarmen, og denne krever ikke noe varmebehandling heller, så med denne kan du slippe helt unna kokeplater og stekeovn også. En kniv og blender er i grunnen alt du trenger.

Gazpacho er en sofistikert rett å servere i sommervarmen. Den er svalende, smaker friskt av sommermodne grønnsaker og har et skikkelig kikk fra chili, hvitløk og eddik. Og for all del, ikke spis med en gang, men la suppen stå i kjøleskapet å godgjøre seg noen timer. Da blir den ordentlig kald og alle smakene får satt seg. Den tåler dessuten fint å stå en dag eller to i kjøleskapet også. Så skulle du få noen rester, er et glass av dette et ypperlig mellommåltid.

Vil du gjøre suppen litt mer mektig, kan du tilsette en klatt yoghurt ved servering, eller noen reker, eller en skive spekeskinke. Du kan også servere den i shotglass som en av flere retter på et tapasbord. Mulighetene er mange, og det er i grunnen bare fantasien som setter grenser.

Ingredienser

  • 1 agurk
  • 1 liten grønn paprika
  • 1 løk
  • 1 stilk stangselleri
  • 1 grønn chili
  • 2 skiver loff
  • 30 skollede mandler
  • 2 håndfuller spinat
  • 4 ss sherryeddik
  • 2 fedd hvitløk
  • 1/2 ts salt
  • nykvernt pepper
  • 1 dl olivenolje
  • 3 dl vann
  • ca 2 dl Farris

Fremgangsmåte

  • Skrell agurken, skåld mandlene og skjær skorpen av loffen.
  • Skjær alle grønnsakene i biter.
  • Ha alle ingrediensene unntatt farrisen oppi en blender og kjør til det er en helt glatt suppe.
  • Sett suppen i kjøleskapet et par timer.
  • Før servering justeres konsistensen ved å spe med Farris.
  • Suppen kan gjerne serveres med små terninger av agurk, løk og paprika.
