Heldigvis, endelig ser det ut som om temperaturen skal krype godt over tyve grader. Da er det absolutt på sin plass å servere en kald suppe. Det er både leskende og veldig godt. Den aller beste i denne kategorien er spansk gazpacho. Den er proppfull av deilige grønnsaker, så i tillegg til å være svalende er den også veldig sunn.

Gazpacho kommer opprinnelig fra Syd-Spania og som et lite nikk til denne landsdelens historie,  har jeg tilsatt litt spisskummen i suppen. Araberne regjerte i dette området i nesten 800 år, og har derfor hatt sterk innflytelse på det lokale kjøkkenet. Riser du rundt i dette området, dukker det stadig opp små hint fra denne tiden på menyen. Det sies til og med at spanjolenes kjærlighet til skinke begynte som en demonstrasjon på at de ikke var arabere, ved å spise svinekjøtt.

Denne gapachoen er temmelig rustik. Jeg vet at noen siler suppen for at den skal bli helt tynn og flytende. Jeg liker imidlertid at den er litt klumpete og grov. Vil du sile suppen, anbefaler jeg at du dropper å tilsette loffen, for det er den som gir suppen litt fylde og struktur.

Spansk gazpacho egner seg godt som en lett lunsj, eller som en av flere tapasretter.

Ingredienser

  • 800 gr moden tomater
  • 1 liten agurk
  • 1/2 liten rødløk
  • 1/2 grønn paprika
  • 1 skive loff, oppbløtt i vann
  • 3 ss olivenolje
  • 2 ss sherryeddik
  • 1/2 ts salt
  • nykvernet pepper
  • 1/4 ts spisskummen (kan droppes)

Fremgangsmåte

  • Rens alle grønnsakene og skjær dem i mindre biter.
  • Ha alle ingrediensene i en blender.
  • Kjør til det er blitt en jevn masse.
  • Smak til og tilsett evt. mer salt, pepper, eller sherryeddik.
  • Sett suppen kaldt i minst 4 timer og gjerne over nattene.

Server og garner gjerne med små terninger av agurk, paprika eller løk. Vel bekomme
