I dag var det et fantastisk vær og tiden kommet for utespising har definitivt meldt seg. En ting som egner seg veldig godt til mye av det jeg ønsker og pleier å spise utendørs er potetsalat. Det passer ypperlig til grillmat, spekemat og er fint å ta med seg på en piknik i parken eller andre steder. For meg er det to hovedtyper potetsalat. Det er den klassiske norske potetsalaten med rømme og det er den franske varianten med en vinaigrette.

Fordi Lillemor helst ikke skal ha melk, blir det ofte en variant av den franske. Som med alle salater kan man gjøre den enkelt med bare de helt essensielle ingrediensene eller bygge den ut med mange godsaker. Oppskriften nedenfor er av den heller enkle sorten, men som sagt er det bare fantasien som setter grenser. Uansett hva man velger å ha i vil jeg si at det er kvaliteten på potetene og olivenoljen som er avgjørende for et godt sluttresultat. Og så er det viktig med mye urter, hvilke bestemmes av tilgang og smak.

Ingredienser

  • 8 middels store poteter
  • 1 liten rødløk
  • 1 liten håndfull urter
  • (gressløk, persille, timian, rosmarin, merian, oregano osv.)
  • 1 toppet ts dijon sennep
  • 1/2 dl rødvinseddik
  • 2 dl god olivenolje
  • nykvernet pepper
  • maldonsalt

Fremgangsmåte

  • Begynn med å koke potetene knapt møre i lettsaltet vann. Bruk gjerne nypoteter, men pass på å ikke koke så lenge at de blir vasne.
  • Avkjøl potetene litt og skrell dem og del i terninger.
  • Finhakk rødløken og urtene - bruk de du liker, en eller bland flere).
  • For å blande vinaigretten,  pisk sammen eddik og sennep. Hell deretter oljen i sennep-eddik blandingen i en tynn stråle mens du pisker hele tiden. Smak til med nykvernet pepper og salt. Ha urter og løk i vinaigretten og bland.
  • Ha til slutt i potetterningene og bland godt slik at alle potetene bli dekket med vinaigretten.

La gjerne potetsalaten så og trekke en stund før du serverer.

Fant for noen år siden «Fransk potetsalat med soltørkede tomater» på nettet, var det du som la ut den i sin tid? Men finner den ikke lengre ?

Så hyggelig at du sier det. I fjor høst oppdaterte jeg bloggen min, og en del oppskrifter med gamle bilder ligger i arkivet i påvente av nye bilder. Kommentaren din minner meg på at det er lenge siden jeg har laget den, og at det er på tide nå. Her er oppskriften:

4 personer

6 poteter
1/2 rødløk, finkuttet
1 neve bredbladet persille, finhakket
soltørkede cherrytomater
2 ss rødvinseddik
1 ts dijonsennep
salt og pepper
1 dl olivenolje

Kok potetene knapt møre. Skrell og sett til side for å avkjøles litt. Lag vinagretten ved å blande sennep og vineddik. Hell deretter i olivenoljen i en tynn stråle og pisk hele tiden. Smak til med salt og pepper. Når potetene er blitt lunkne kan de skjæres i terninger. Hell dressingen over potetene og bland godt slik at dressingen blir jevnt fordelt. Bland inn urter og tomater og server gjerne til stekt eller grillet kjøtt eller kylling.
