Det næremer seg påske og hva er vel mer på sin plass da enn et skikkelig godt lammemåltid? For mange er en skikkelig lammestek nærmest synonymt med påskeaften samtidig som det kanskje er mange rundt bordet. I år blir jo ikke det siste akkurat aktuelt. Så da kan også et helt lammelår bli litt i overkant stor for kjernefamilien. Men det er jo absolutt ikke grunn til å kaste alle tradisjoner over bord, for det finnes heldigvis andre alternativer som er like godt. Hva med en skikkelig digg lammecarré med urteskorpe? Lammecarré selges ofte i pakker på ca. 1 kg, og passer derfor perfekt til 4-5 personer.  En mindre surret lammestek er selvsagt også et godt alternativ for påskemiddagen.

Men altså, dere, lammecarré, det er snadder det. Carréen er en del av ryggen til lammet og er et av de aller beste stykkene, synes jeg.  For å gi lammecarréen ekstra god smak har jeg gitt den en urteskorpe bestående av de urtene jeg liker best sammen med mandler, hvitløk og olivenolje. Jeg har brukt persille, rosmarin og timian, men bruk de urtene du liker best.

Her serverte jeg lammet sammen med fløtegratinerte poteter og grønnsaker, men bruk gjerne det samme som du ville brukt til lammesteken.

Ingredienser

  • 1 kg lammecarre
  • salt og pepper
  • olje til steking
  • 4 ss finhakket flatbladet persille
  • 2 fedd fersk hvitløk
  • 1 ss finhakket rosmarin
  • 1 ss finhakket timian
  • 2 ss olivenolje
  • 1 neve mandler
  • 2 ss dijonsennep

Fremgangsmåte

  • Sørg for å ta ut kjøttet av kjøleskapet slik at det har romtemperatur.
  • Sett ovnen på 200 grader.
  • Salte og pepre kjøttet godt.
  • Brun kjøttet i litt olje i en stekepanne til det er pent brunt på alle sider.
  • Kjør urtene mandlene og oljen til en litt grov saus med stavmikser.
  • Smør sennep på den mest kjøttfulle siden av carréen, og bre urteblandingen over sennepen.
  • Stikk inn et steketermometer.
  • Sett kjøttet inn i ovnen med urteblandingen opp og stek til kjøttet har en kjernetemperatur på 55 grader (for rosa, 60 grader om du vil ha kjøttet mer gjennomstekt).
  • Ta kjøttet ut og la det hvile i ca. 10 minutter.
