Fløtegratinerte poteter er noe av det beste jeg vet: En blanding av poteter, løk og hvitløk kokt myke i en blanding av melk og fløte med et lite lokk av ost på toppen.  For meg hører lammestek og fløtegartinerte poteter sammen. Jeg er veldig glad i disse potetene, men har lenge hatt problemer med å få poteter og stek ferdig på samme tid. Ovnen min er såpass liten, eller formene for store, sånn at det vanskelig er plass til både poteter og stek på en gang. Jeg har derfor vært i gjennom en rekke eksperimenter som blant annet å putte steken i senger med dynen over for å holde den varm. Jeg har også forsøkt å overbevise meg selv om at kald stek er helt OK så lenge saus og poteter er helt varme. Men det er jo ikke like godt.

I Benst Stiansens «Stiansen til hverdags» lærte jeg imidlertid et genialt triks. Han foreslår nemlig å koke potetene i fløte/melkeblandingen først. Det reduserer steketiden til omtrent en tredjedel og dersom man klarer å time det riktig, vil potetene stekes mens steken hviler. Slik får man både varm stek, ferdig hvilt og varme fløtegratinerte poteter samtidig. Her er min oppskrift.

Ingredienser

  • 800 gr poteter
  • 2 fedd hvitløk
  • 1 liten løk
  • 3 dl matfløte (eller halvt om halvt kremfløte og melk)
  • 1/2 ts salt
  • nykvernet pepper
  • revet ost, ikke for mye

Fremgangsmåte

  • Sett oven på 220 garder.
  • Skjær poteter, løk og hvitløk i tynne skiver.
  • Ha potetene, løken og hvitløken i en gryte.
  • Bland melk, fløte og salt og pepper og hell blandingen over potetene.
  • Kok opp og la det koke i ca. 5 minutter.
  • Hell alt i en ildfast form og sett inn i den varme ovnen.
  • Stek i ca. 20 minutter.
  • Etter ca. 10 minutter, drysses osten over. Stek 1o minutter til og stikk med en kniv i gratengen for å kjenne at potetene er møre.
