Brandade er en deilig, tradisjonell sydfransk rett bestående av salt torsk, poteter og olivenolje. Det er sikkert like mange måter å lage denne retten på som det finnes husmødre i nevnte område. Synes du dette høres ut som en temmelig traurig rett? Da tar du feil. Tenk deg en skikkelig luftig potetmos smakt til med hvitløk og en herlig salt smak fra fisken som balanseres fint med olivenolje. Når mosen er laget legges alt i en ildfast form og gratiners med litt griljermel og ost på toppen. Jeg kan altså ikke se hvordan dette ikke kan bli godt. Brandade med torsk er rett og slett skikkelig godt.

Tradisjonelt skal det brukes klippfisk, men retten er også et godt eksempel på at restemat faktisk kan bli bedre enn sitt utgangspunkt. Jeg hadde nemlig noen rester av kokt torsk i kjøleskapet, og bestemte meg for å bruke disse. Smaken ble kanskje ikke like intens som med klippfisk, men du verden så godt, og kanskje lettere å selge inn til noen som ikke er så glad i fisk siden fiskesmaken ble litt mindre fremtredende.

Dette er ganske kraftig kost, så server gjerne brandade med torsk sammen med en frisk salat. Enten du velger en grønn salat med en syrlig dressing eller en tomatsalat som i seg selv har en del syre balanserer det godt. Skal du ta den helt ut, er det heller ikke feil med et lite glass vin ved siden av.

Ingredienser

  • 400 gr kokt (lettsaltet) torsk
  • 400 gr poteter
  • 2 fedd hvitløk
  • 2 dl melk
  • ca. 1 dl olivenolje
  • salt og pepper
  • 1/2 bundt gressløk
  • griljermel
  • revet parmesan

Fremgangsmåte

  • Sett ovnen på 200 grader varmluft
  • Kok potetene og hvitløksfeddene i usaltet vann.
  • Trekk evt. fisken til den er gjennomkokt.
  • Varm opp melken.
  • Mos potetene og hvitløksfeddene.
  • Spe melken i potetene og rør godt. Mosen må ikke bli for løs, så ta litt etter hvert.
  • Flak fisken og ha den oppi potetmosen og rør kraftig til alt er godt blandet og det ikke lenger er store klumper med fisk.
  • Rør inn olivenoljen.
  • Hakk opp gressløken og rør den inn.
  • Smak til med pepper og evt. mer salt.
  • Legg i ildfat form og strø over griljermel og revet parmesan.
  • Stek i ovnen i ca. 15 minutter til overflaten har blitt gyllen.

Server straks med en frisk salat ved siden av og gjerne også litt godt brød. Vel bekomme.
