Pin

Pad thai er en favoritt hos de flest som har vært i Thailand. Dette er gatemat på sitt beste; raskt, godt og billig.   I sin enkleste form er pad thai risnudler med den søt-syrlig saus, litt protein i form av kylling, tofu, egg eller reker. På toppen er det gjerne drysset litt peanøtter, koriander og noen dråper limejuice.

I min variant av pad thai med reker har jeg byttet ut en del av nudlene med finsnittet hodekål. Det gir retten litt mer tyggemotstand. Dessuten har jeg lagt til litt andre grønnsaker også for både farge og tekstur.

Det som gjør pad thai så spesielt er den søt-syrlige smaken på sausen, og det er tamarind som bidrar til dette. Tamarind får du kjøpt i asiatiske butikker. Det er litt klinete å holde på med og pass på å få ut kjernene, men smaken er herlig og helt nødvendig i denne retten. Hvor mye du vil bruke er jo en smakssak, men dressingen skal balansere mellom den syrlige tamarinden, sukker og umami fra fiskesausen. Smak deg frem til en blanding du liker. Sausen nedenfor er nok på den syrlige siden.

Ingredienser

  • 3 ss tamarindpasta
  • 3 ss varmt vann
  • 2 ss fiskesaus
  • 1,5 ss brunt sukker
  • ---
  • 300 gr risnudler
  • 300 gr kål
  • 100 gr aspargesbønner
  • 1 rødløk
  • 1 rød spisspaprika
  • 1 bunt vårløk
  • litt rapsolje til steking
  • 1 fedd hvitløk
  • 3 egg, sammenpisket
  • 1 kg reker med skall
  • 50 gr peanøtter
  • frisk koriander
  • 1 lime

Fremgangsmåte

  • Løs tamarindpastaen opp i det varme vannet, og ta ut evt. frø.
  • Bland resten av ingrediensene til sausen og smak til. Sett til side.
  • Pill rekene, og sett til side.
  • Kok risnudlene etter anvisning på pakken.
  • Finsnitt kålen, skjær aspargesbønnene i mindre biter, rødløken i tynne skiver og paprikaen i strimler. Finhakk hvitløken og skjær vårløken i ringer. Grovhakk peanøttene.
  • Varm oljen i en stor stekepanne, eller wok og rørestek kål, løk, bønner, paprika og hvitløk på høy varme i noen minutter til grønnsakene faller litt sammen, men fortsatt har litt sprøhet i seg.
  • Ha de kokte risnudlene oppi og stek videre i ca. ett minutt til nudlene har blitt varme.
  • Hell sausen over og bland godt.
  • Skyv alt til siden i pannen  slik at det blir tomt i den ene halvparten av pannen og hell eggene i tomrommet og rør til det har blitt eggerøre.
  • Bland egg med nudleblandingen og ha oppi reker og vårløk. La alt bli gjennomvarmt.

Server med hakkede peanøtter, lime og koriander. Vel bekomme.
