Vi har ofte en grønn salat ved siden av hovedretten til middag. Det er så mye mat som er brun, og da synes jeg det kvikker opp så fint med noe grønt på tallerkenen. Dessuten gir en blandet grønn salat verdifulle vitaminer og andre næringsstoffer. Når jeg lager en grønn salat forsøker jeg å blande flere forskjellige salattyper. Det synes jeg gjør salaten mer interessant og sikkert mer næringsrik også. I salaten på bildet har jeg brukt romanosalat, ruccola, spinat og persille.

Det finnes så mange forskjellige salater i butikken nå for tiden, så det er ingen grunn til å velge den velkjente isebergsalaten hver gang. Faktisk synes jeg den er veldig kjedelig, og unngår den så sant det er mulig. I stedet velger jeg hjertesalat eller aller helst romanosalat som basis. Romaonsalaten har nemlig den store fordelen at den holder seg veldig godt, selv når den har blitt skåret opp i biter. Det betyr at dersom jeg lager en salat til middag, er den helt fin til lunsj neste dag også.

I tillegg til forskjellige salattyper er det mye annet som også kan brukes i en grønn salat. En del av grønnsakene i butikken har gress eller blader. Det kan være de innerste bladene på stangsellerien, eller dusken på fenikkelen. Det er ingen grunn til å kaste disse, for de smaker nydelig.

Det er også fint å bruke urter. Persille, både bredbladet og krus, er en av mine salatfavoritter fra urtebedet. Men det er mange andre som også er spennende å bruke. Er det et asiatisk måltid kan det for eksempel være fint å blande inn koriander og mynte. Om sommeren vokser det mye vilt som er godt, som for eksempel løvetann, skvallerkål eller rødkløver.

Dressing

Når jeg serverer salat, liker jeg å servere dressing ved siden av. Ofte setter jeg rett og slett bare olivenolje, eddik, salt og pepper på bordet, så kan alle forsyne seg med det de ønsker. Som for selve salaten, er det også uendelig mange muligheter til å variere dressingen. Olivenoljen kan byttes ut med andre oljer som rapsolje, nøtteoljer, eller en olje smaksatt med urter, sopp eller krydder. Og eddiken, det finnes utrolig mange forskjellige eddiker. Min favoritt er kanskje sherryeddik. Eller dropp eddik helt og tilsett sitronsaft, appelsinjuice eller kanskje fiskesaus i stedet.

En av grunnene til at jeg liker å servere dressingen ved siden av er at syren i dressingen bryter ned salaten og gjør den slapp. Den må derfor tilsettes rett før servering, om den skal tilsettes salaten. Og skulle det bli noe igjen, er det ikke særlig spennende etter noen timer.

Salatslynge

Lenge vegret jeg meg for å anskaffe en salatslynge. Jeg liker ikke å ha så mange ting som bare kan brukes til en ting, men mindre det er noe jeg vil bruke veldig ofte. Det finnes unntak, men det kan jeg komme tilbake til en annen gang. Til slutt gikk jeg allikevel vil innkjøp av en salatslynge, og det viste seg å være ganske lurt. Nå bruker jeg den hele tiden. Eller det vil si, jeg kjøper salat som jeg vasker med en gang og så legger jeg den i poser i kjøleskapet. Da har jeg ferdig vasket salat klar når jeg skal lage. Og så er det jo mye billigere enn å kjøpe den ferdig vaskede salaten i butikken.
