På søndagene liker jeg å bruke tid på å lage mat. Da har jeg bedre tid enn de andre dagene, og kan lage mat som tar lang tid å lage. Noen kaller det slow-food. Ofte blir det tradisjonelle søndagsmiddager, som stek, fersk kjøttsuppe, gryteretter eller lignende.

Lammestek er et av favorittalternativene. Etter min mening er det lite som slår en akkurat passe stekt lammestek med gode grønnsaker til. Akkurat passe stekt er selvsagt høyst individuelt. Noen liker gjennomstekt, mens andre liker kjøttet rosa i midten. Uansett hvordan man liker det er det lett å få det resultatet man ønsker ved å bruke steketermometer. Hjemme hos oss liker vi det rosa, og da passer det å ta steken ut av ovnen når den nærmer seg 58 grader. Etter at den er tatt ut av ovnen, stiger temperaturen gjerne et par grader.

Jeg synes det er lettest å servere lammesteken når den er benet ut på forhånd. Et helt lammelår er selvsagt flott, men jeg synes det er vanskelig å skjære det slik at det blir pene serveringsstykker. Derfor pleier jeg som regel å kjøpe ferdig benet ut og surret stek.

Ingredienser

  • ca. 1 kg lammestek av bog eller lår, surret
  • salt og pepper
  • rosmarin
  • 2 fedd hvitløk

Fremgangsmåte

  • Ta kjøttet ut av kjøleskapet i god tid før tilberedning.
  • Sett ovnen på 125grader.
  • Salt og pepre kjøttet og gni inn rosmarin og hvitløk.
  • Brun det i en stekepanne ved forholdsvis høy varme, slik at den blir brun rundt hele.
  • Legg kjøttet i en ildfast form og kok ut pannen med litt vann. Hell vannet i formen sammen med steken. Stikk inn steketermometeret slik at det går midt inn i steken.
  • Stek steken til termometeret viser 58 grader. Det tar ca. halvannen time og da blir steken rosa. Dersom du ønsker en helt gjennomstekt stek, venter du til termometeret viser 70 grader.
  • Når du har tatt ut kjøttet, dekk det da med litt aluminiumsfolie og la den stå på kjøkkenbenken i 15-20 minutter før du skjærer den opp.
